Bacon-Wrapped Shrimp w/ Spicey Orange Dipping Sauce

8 large shrimp, shelled and deveined, tail on
4 slices bacon, cut in halves

Spicy Orange Sauce:
3 Tbsp. orange marmalade
1 hot chile pepper, seeded and chopped
2 green onions, chopped (both white & green parts)
2 Tbsp. chopped fresh cilantro
2 Tbsp. EVOO
Slat & Pepper to taste

1. Preheat the broiler.
2. Combine all sauce ingredients in a small bowl, whisking well.
3. Wrap each shrimp in a slice of bacon and secure w/ toothpick.
4. Place shrimp on broiler pan, and broil 2-3 minutes on each side, turning once, until bacon is crisp and shrimp is opaque.
5. Arrange shrimp on a platter and serve immediately with sauce.

You can also dredge them in seasoned (S&P)flour, seasoned cornstarch, seasoned cornmeal, or a combo of any of the 2 or 3.

1 1/3 c. self rising flour, 1 c. water, 1 egg, 2 tsp. sugar, 2 tsp salt. Blend with mixer, dip shrimp & drop into hot canola oil. Canola oil is best & this batter is absolutely Fabulous & is also great for any kind of fish. I searched years for this recipe. Enjoy!

Use homemade batter

mix flour and a little corn meal together with spices of your choice. Garlic powder is always good.

slightly beat some eggs on a bowl

dip shrimp in dry mixture then in eggs then dredge once more in dry.

this makes them nice a crispy. This is also how we do it in the south :) Good luck

I use panko crumbs. Just dip shrimp in beaten eggs and coat with panko and fry. I mix Sweet Thai chili sauce with mayo for a dip and it's so yummy.

homemade batter (used for sweet & sour chicken or whatever)

3/4 c flour
3/4 c water
2 Tbsp cornstarch
1 tsp salt
1 tsp baking soda

Broil them in red wine and butter.
