Can I substatute evaporated milk?

'What's missing from regular milk that exists in heavy cream is BUTTER FAT. To make one cup substitute of heavy cream from milk and butter: 3/4 milk, plus 1/3 cup melted butter (or margarine)

No I don't recommend doing that. The pie WILL NOT come out right it will remove the richness you'd be better off using regular milk or cream or better yet buying heavy whipping cream. : )

Probably not. The thickness of the heavy cream is there to provide body and texture to the pie.
