Instead of cornstarch you should use sour cream to make a traditional stroganoff. And the noodles should be egg noodles.

mostly yes, what i would do instead of cornstarch because of its weird flavor is use flour. after you brown your deer ( which i use alot of) add flour, if your deer isnt to "fatty" you can add a bit of canola oil or oil of your choice. then add flour. this makes a roux the more flour you add the more sauce you will get. just remember to cook the flour untill it slides around the pan. its just like making gravy.

then i would add beef broth to the roux and mix. if you add to much then add some cornstarch mixed with a little bit of water to thicken it up. i would also add sour cream and dijon mustard. not much about 1/4 of a teaspoon of the mustard.

I thought proper stroganoff needs sour cream in the gravy, but what you've got sounds like a great recipe for venison tips over noodles. Would be good with rice too. Let us know how it turns out!

well, beef is actually cow meat but using venison could be a tasty spin on the classic strogenoff. also you should use sour cream and serve over the egg noodles

Yes that is pretty much it. you could add sour cream to the top at the end also to make a good stroganoff. Deer meat sounds a bit gamey though

Umm, classic strogenoff has a milk based sauce (bechamel) but this is close. Like deer hash or something.

be sure to add the sour cream at the end - don't cook it! and I would make a roux to thicken the sauce instead of the cornstarch.
