Joan of Arc is the most famous saint of France.

Saint Columba of Breton, and Marie-Julie Jahenny the Breton Stigmatist, but I'm not sure she's even "blessed" yet...

Marguerite Marie Alacoque who gave us the Sacred Heart devotion.

Saint Collette, founder of the Colletine branch of the Poor Clares.

Those are the only ones I know.
