Ooooo, I never, ever bake my hens with the stuffing inside at first. I start out with just my hen, and bake it at 350 degrees for about an hour. Then I add the stuffing, place a tin foil "roof" over the whole bird, and continue baking for about 30 minutes. For the juiciest bird, baste it with olive oil and chicken broth! Enjoy!!!

I love to watch Alton Brown on food network. He says he does not like to cook stuffing inside bird because of the bacterias and it dries out the meat. But you can do this by using a cotton cooking bag stuffed inside the bird. check out the website

2/3 cup hot water
2 tablespoons butter
2 cups Stove Top chicken stuffing mix (dry)
1 (8 1/4 ounce) can crushed pineapple in syrup
4 boneless skinless chicken breast halves, pounded 1/4 in. thick
1/2 cup green peppers, chopped
2 tablespoons brown sugar
2 tablespoons vinegar
1/4 teaspoon ground ginger

Heat oven to 400*.
Mix hot water and butter in bowl. Stir in dry stuffing mix, pepper, half the pineapple and syrup.
Spoon stuffing evenly on chicken; roll tightly, secure with toothpicks. Place in 9 inch square pan with any remaining stuffing in center.
Mix remaining pineapple and syrup, sugar, vinegar and ginger, spoon over chicken. Bake for 30 minutes or until thoroughly cooked.

You aren't supposed to bake stuffing inside meat. The bacteria....
You should bake the stuffing and hen seperately, then stuff it afterward.

45 minutes and 350 degrees
the time i s according to the size
but to insure check your chicken every 5 min
you just want it to cook not get burnt.

Cheese-Stuffed Chicken in Phyllo:
8 skinned and boned chicken breast halves
1 teaspoon salt
1/2 teaspoon pepper
4 cups chopped fresh spinach
1 medium onion, chopped
2 tablespoons olive or vegetable oil
1/2 (8-ounce) package cream cheese, softened and cut up
1 cup (4 ounces) shredded mozzarella cheese
1/2 cup (2 ounces) crumbled feta cheese
1/2 cup (2 ounces) shredded Cheddar cheese
1 egg yolk, lightly beaten
1 tablespoon all-purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cumin
16 frozen phyllo pastry sheets, thawed
Melted butter or margarine
Mixed salad greens
Place chicken between 2 sheets of heavy-duty plastic wrap, and flatten to 1/8-inch thickness, using a meat mallet or rolling pin. Sprinkle evenly with salt and pepper, and set aside.
Sauté spinach and onion in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is tender. Remove from heat, and stir in cream cheese until blended. Stir in mozzarella cheese and next 6 ingredients.
Spoon 1/4 cup spinach mixture on center of each chicken breast half, and roll up, jellyroll fashion.
Unfold phyllo sheets on a lightly floured surface. Stack 2 phyllo sheets, brushing with melted butter between sheets. (Keep remaining phyllo sheets covered with plastic wrap to prevent drying out.) Place 1 chicken roll on short side of phyllo stack; gently roll up, folding in long side. Repeat procedure with remaining pastry, melted butter, and chicken. Place rolls in a shallow pan, and brush with melted butter.
Bake at 350° for 35 to 40 minutes or until done. Serve on a bed of mixed greens, if desired.
Yield: 8 servings
