Baked Zitti (it's what I'm making)
Get 2 lbs of ground beef and brown, seasoning it with salt pepper and garlic. Then take a lb. of large elbow macaroni and prepare them. When the meat is browned, add some spaghetti or marinara sauce to it and some dried basil. When the noodles are done, drain them completely and then add them and the meat and sauce mixture to a baking dish or roast pan. Mix in 1 1/2 lbs of shredded cheddar cheese (you get it in 2 pound bags, reserve 1/2 lb for topping) and a half cup of parmessan cheese. Then top with the reserved cheese and some more parmessan and put in a 350 degree oven for about 45 min. Makes 8 to 10 servings.

Get a few chicken breasts, marinade them in italian dressing, or garlic herb marinade, roll them in eggs and italian breadcrumbs, bake for and hour and a half or so. You can cut cook time by browning them in a skillet first until they're cooked through, then just bake them for twenty minutes or so. Cook time will depend on how big the peices are. Of course, pasta is always fast, cheap, and easy too. Ravioli looks a little more like you worked hard, too, if you're trying to impress.

Shrimp Primavera stir fry. You can find it in a bag in the frozen section of the grocery store. It's delicious and easy to make. All you have to do is first put the pieces of shrimp in the pan for like 4 or 5 minutes then add the carrots, broccoli, green beans and other veggies that come with it and lastly after thawing out the noodles at them in and let it simmer for a few minutes. It's cheap, easy and so delicious!

Barley-Mushroom Pilaf:
Use vegetable broth to make this dish vegetarian. Serve with roasted asparagus.
3 cups fat-free, less-sodium chicken broth
1/3 cup dried porcini mushrooms, chopped (about 1/3 ounce)
1 1/2 cups uncooked quick-cooking barley
2 tablespoons olive oil
3 cups quartered shiitake mushroom caps (about 8 ounces)
2 cups chopped onion
3/4 teaspoon salt
1/2 teaspoon dried rosemary
1 (8-ounce) package presliced mushrooms
1/4 cup dry Marsala
2 teaspoons sherry vinegar
Combine broth and porcini in a large saucepan. Bring to a boil; stir in barley. Cover, reduce heat, and simmer 12 minutes or until tender.
While barley cooks, heat oil in a Dutch oven over medium-high heat. Add shiitake, onion, salt, rosemary, and presliced mushrooms; sauté 5 minutes. Stir in Marsala; cook 1 minute. Stir in barley mixture and vinegar; cook 2 minutes or until thoroughly heated, stirring frequently.
Yield: 4 servings (serving size: 1 1/2 cups)
