Sunnis believe all seafood is halal, but Shias don't eat shellfish or fish that doesn't have scales.
I think the crab that they have in California rolls are called surimi and they're artificial crab meat, if I am not mistaken! Check with the restaurant :)

depends on the sect you belong to - if any. I, myself, don't do the sect thing. Been there, done that. The Shi'a say shellfish is haram. I think Sunnis say it's ok - better check it out though. Try islamicity.com for more info.
