melt a little butter in a fry pan ,, sprinkle your meat with a little oregano , basil, garlic, chile powder very little of this one, when pan is good and hot put meat in pan to sear it , brown on all sides , put in roasting pan , or any oven proof pan you have, add one cup water, larger peices of potato , carrots , celery, onion, turnips, mushrooms, and half peices of corn on the cob, sprinkle these with the same seasonings , dot with one stick butter , pour another half cup water over all , cover bake one hour to one hour and a half , another words till done to your taste, enjoy only need maybe some rolls to finish it off , one pot meal. if you want a gravy to go with it , mix the drippings with two cans cream of mushroom soup, and one pkg, onion soup mix , heat and serve to prepare on the stove top you will have to use a little more water, put just play it by ear and check often, dont want to add to much just enough so it doesnt scorch,or burn

Place a small amount (2 table spoons Oil or Fat of your choice) into baking dish (or oven roasting bag if preferred).

The trick is slow cooking. Keep heat about 140/150 c and spoon oil over every 15/20 mins from baking dish. You will want to cook it over Two and a Half hours. Keep basting. Of course the size 'small' may determine time for cooking so smaller of course less time...but the trick is slow cooking or you will end up with a football you could bounce of a lamp post (yes me's done it ;)

Good Luck and dont forget those herbs and garlic!

Blessings be yours in light and peace

yeah it will still be tender. get a large deep pot and put it in a cooking bag with some white whole potatoes (they come canned for convienence) and some cut carrats and green beens. Make a broth from water and beef buillion cubes and poor into the cooking bag. Tie it off and cook on 350-375 (depending on your oven (gas/electric/old/new/etc) for at least an hour. **cooking times may vary so just check it to see if the middle is cooked before serving.

enjoy

Here's how I do it and it's so tender that you don't even need a knife...

I stab it with a big knife all over, and stuff garlic cloves in the holes. Then I rub the outside with salt and pepper and brown all the sides of it on a skillet with a little oil.

Then I put it in a deep pan in the oven (300 F) for about 3-5 hours. I take the drippings and make a gravy (cornstarch mixed with water, added by the teaspoon into the drippings).

I never have leftovers with that.

Get an oven roasting bag. They will be in the grocery store with the baking supplies. Put the meat in it and seal it. Roast in the oven for 350 for an hour or so. For best results, cut up various root vegetables (carrots, potatos etc) and put them in there with the meat. Not only will the meat come out tender, but the vegetables will absorb the meat flavor and be delicious.

A chuck roast has to be slow cooked, no matter what you use to cook it in. If you want to use the oven or range top, just make sure you use a low heat or flame and use a liquid to cook it in, such as stewed tomatoes in their juice. Add a chopped onion, carrot and celery if you wish, sprinkle with your favorite spices, such as pepper, chili, paprika, garlic, etc. and cook for at least a couple of hours.
