Use the best ingredients you can. Real butter (unsalted), the best chocolate you can find, preferably Belgian or Swiss. Chocolate made in the US is generally not as good a quality. If you are making truffles, be sure to use HEAVY whipping cream and real liqueurs (if they are for adults). Taste good chocolate, for instance, go buy a candy bar from Godiva and also purchase a Hershey and Cadbury. Make sure they are all the same type of chocolate, milk or dark. Taste them side by side and you will realize which company puts WAX in their chocolate. The better the ingredients, the better the chocolate.
