Actually, nothing could be further from the truth.

Roasted coffee beans (unground) go stale in about two weeks, max. Ground coffee begins going stale the moment you grind it. Smell all that coffee aroma when you grind? It's coffee going stale.

I roast my own coffee beans, typically purchase them from a green bean broker and seller called Sweet Marias (link attached). If you've never tasted coffee made from freshly roasted beans, ground immediately prior to brewing, you've never really tasted coffee - many settle for the charred, burnt, diluted version they sell at the big chain coffee "specialty' places like Starbuck's.

Are you sure its a USE BY DATE, as this is completly different to a BEST BEFORE DATE? The use by date is usually on products that will become harmful if eaten aften a certain date. But a best before date is an idicator to eat it before it loses it original quality. So its not that the coffee will "go off" as such, just that it will begin to loose frechness , flavour and maybe some colour!

Nothing lasts indefinately and as any coffee you buy IS ROASTED or PROCESSED in some way All Eventually Deteriorate! Glass jars Plastic lids and materials used for seals are NOT TOTALLY AIRTIGHT! Even Tinned goods deteriorate! Most Materials allow minute amounts of air in as they are not really solid even if they feel it!

Coffee lets off CO2 gas and needs to breathe, so unless it's in a special airtight package with a special CO2 valve, it will go stale. Also, coffee has a lot of oil in it, which will go rancid just like nuts.

Once the coffee is ground and exposed to light and air it starts to lose it's strength/freshness...like spices; try to buy whole beans and grind only when you're going to use them...whole beans usually hold their strength in a sealed bag for about 3 months...

It shouldn't go bad if it's sealed, but it can get stale and bad if open

It will not go bad, as in spoil like some foods, but it will eventually lose it's taste.

it will go off as every thing goes off. if you leve it for 50 years it will off turned to earth like dust
