turkey meatloaf:
3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup
Preheat oven to 325 degrees F.
In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

Go to the website allrecipes.com and search for ground turkey recipes....this is an awesome site and also don't forget to check out the reviews of each recipe you will get lots of hints and it will give you an idea of how good the recipe is, each recipe is given stars from 1 - 5 being the best
anyway I love cooking with ground turkey, it is so much more Healthier then ground beef. It is a lighter tasting meat but you can spice it up as much as you like, so i suggest using it in place of any beef (ground) recipes such as speggetti meat sauce, sheppards pie, even stir frys! or burritos and other Mexican food, yummy sounds good!

OH i love ground turkey, its so good for you. This is what I usually make with it.
1 lb ground turkey
1 10 oz box chopped frozed spinach, thawed and drained
10 button mushrooms finely chopped
2 garlic cloves diced
1 shallot, finely chopped
3/4 cup grated parmesan cheese
1 egg
1/2 tsp poultry seasoning
1 tbs dijon mustard
salt and pepper
olive oil
Mix all ingredients except oil together well, form into patties. Drizzle the patties with the olive oil and cook until done all the way through in a skillet. Serve on any kind of bun you choose.
ps. if you wanna go low carb, serve it on big porabello caps that have been grilled. DELICIOUS!!

My husband uses ground turkey all the time. Just use it the same way as you would ground beef (or Boca grounds, my personal favorite). Make a taco salad or sloppy Joe's!

Turkey burgers....I heard these were good and you make them like regular burgers, but they are not as fattening. You would probably have to add some oil to the pan when you cook them or just sear the patties and finish boiling them in some water....

i like to make meatloaf out of it also.
1 lb ground turkey
one onion - grated
1/2 red bell pepper 1/2 green bell pepper diced
3 garlic cloves
fresh herbs like thyme
salt, pepper, pinch of pepper flakes
ketchup, worchisire sauce
bread crumbs
one egg
sautte ur veggies with some salt and pepper.. let cool mix in with the rest of the ingredients. shape your meat into a log, make a sauce out of tomatoe paste, herbs, and onions.. cover ur log with this paste, bake for 45 minutes to an hour. the meatloaf should be nice and moist.. serve with mashed potatoes

I have made these dishes this year and they are very good:
"Turkey Chilii & Cheddar Melt"
1 tbsp vegetable oil 15 mL
1 lb ground turkey 500 g
1 large onion, chopped 1
1/2 cup celery, chopped 125 mL
1 clove garlic, minced 1
1 tbsp chili powder 15 mL
pinch cayenne pepper pinch
1 can - 28 oz tomatoes 1 can - 796 mL
1 can - 5 1/2 oz tomato paste 1 can - 156 mL
1 can - 19 oz red kidney beans, drained 1 can - 540 mL
1 cup old Cheddar cheese, chopped in chunks 250 mL
2 cups lettuce, shredded (optional) 500 mL
As the days grow colder, and after a long day's work, nothing can be better than a hot turkey dish. Featuring ground turkey, Turkey Chili and Cheddar Melt is a great meal to warm up your day.
Directions: In a large non-stick skillet or Dutch oven, heat oil. Brown ground turkey with onion, celery and garlic, drain if necessary. Add chili powder, cayenne, tomatoes and tomato paste; breaking up tomatoes. Bring to a boil, reduce heat; cover and simmer 20 minutes. Stir in kidney beans, cover and simmer 10 minutes longer. Add Cheddar cheese chunks; simmer 3 minutes longer until cheese begins to melt. Spoon chili into soup bowls; top each serving with lettuce if desired. Makes 4 3/4; cup servings.

Kerri’s Yummy Stuffed Peppers
4 medium green peppers -- tops removed, deseeded, washed
1 lb ground beef *turkey*
½ c. chopped onion
1 tsp Oregano
1 tsp Basil
3/4 tsp cayenne pepper
1 tsp thyme
1 tsp Sage
salt and pepper -- to taste
1 1/2 tsp worcestershire sauce
8 oz. tomato sauce
6 oz. cream cheese
1 egg
1 cup shredded cheese of choice
Core and deseed the peppers. Boil in salted water for 5 minutes (for
firmer peppers, don't boil). Place in a casserole dish. Preheat the oven to 350 degrees.
Brown the onion and beef in a large saucepan. Drain and add the spices and worcestshire sauce. Over low-medium heat, add the tomato sauce and cream cheese and mix until blended. Turn off heat and add the egg and 3/4c of the shredded cheese and mix well.
Spoon the mixture into each of the peppers, then top with the remaining 1/4c. shredded cheese. Bake at 350 for 25-30 minutes.

These are wonderful for a light lunch or dinner.

Ingredients
SALSA
- 3 medium to large tomatoes, cored and cut in half
- 1 tablespoon jalapeño pepper - finely chopped
- 1 tablespoon fresh cilantro - chopped
- 1 tablespoon lime juice
- 1/2 teaspoon salt
pepper to taste
TURKEY CAKES
- 1 cup diced, cooked turkey - dark or white meat
- 2 tablespoons fresh cilantro - chopped
- 1 tablespoon onion, chopped
- 1 fresh red or green chile - jerrano or jalapeño, seeded and finely chopped
- 1/2 red pepper - diced
- 1/2 cup shredded parmesan cheese mixed with 1/2 cup of bread crumbs
grated zest of one lime
- 2 tablespoons lime juice
- 3 tablespoons leftover gravy or heavy cream
salt and pepper to taste
- 1 egg, separated
- 1/2 cup cornmeal
- 1/4 cup olive or vegatable oil

Make a sauce bolognese, the same u would make from gr. beef.
mAKE turkey burgers with chopped cilantro.
Make meatballs just like with gr. beef, but add extra egg and parsley and cheese to up the flavor.
Make chili, either with regular kidney beans or with white beans.
Or feed it to the dog. and get yourself some gr. beef, it's nicer.
