i believe there are cheap healthy options out there ... suggestions?

There are so many! As a vegetarian (that also happens to be broke) I am always looking for new cheap healthy recipes as well. Do a google search for "frual cooking" or something similar and you'll find plenty of choices. Check out this site:

Don't believe Actress, Banquet frozen meals are NOT healthy for you.
One of my fave halthy recipes to make is stuffed zucchini. Wash, and halve zuccini, then microwave them till just tender. Scoop out the guts, set aside. Mix up bread crumbs, chopped tomatoe, fresh minced garlic, pasmesean and a little salt and pepper. You could add cooked ground turkey also if you'd like. Stuff the filling in the zuccini boats and bake at 350 for about 10-13 minutes. They are delish.

chicken veg stir fry:

1 tablespoon sesame oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon minced scallions
1 pound boneless, skinless, chicken breasts, sliced into strips
1 cup broccoli spears
1 cup julienned carrots
1/2 pound green beans, chopped
1/2 cup julienned red pepper
1 cup quartered button mushrooms
3 heads baby bok choy, chopped
Low sodium teriyaki sauce

Heat the oil in a wok over high heat. Add the garlic, ginger, and scallions. Cook until aromatic, about 2 minutes. Add the chicken. Saute until the edges are brown, about 3 to 4 minutes. Add the broccoli, carrots, and green beans to the wok. Cook approximately 5 to 8 minutes, until the vegetables begin to become tender. Add the red pepper, mushrooms, bok choy, and teriyaki sauce to the wok, cook approximately 5 to 8 minutes more, or until chicken is cooked through and vegetables are done to your likeness. Taste and adjust seasonings. Serve immediately.

It depends on what you like, the best healthy options include veggies, fruits, albacore, ground turkey and chicken (to make into patties).

Whole grain spaghetti with pasta sauce or make your own with fresh herbs.

Always check ingredients on everything and steer clear of red meat.

For breakfast have smoothies with loads of your fave fruits, yogurt and honey.

Egg whites, 100% Whole Wheat Toast with honey and cinnamon sprinkled on top. Whole grain cereals with soy milk.

Watch processed, packaged foods, they usually contain a lot of trans fats and sodium, so even when they state something is "healthy", does not always make it so.

cook any vegetables you like in a little oil and water, make sure you add mushrooms and beans, add a lot of herbs like basil, oregano, parsley etc and a little salt. tastes wonderul and is definitely healthy.

There are a ton out there. One of my fav's is roasteed garlic and parmesian chicken breats over pasta with a butter cream sauce and artichokes with a side of asparigus layered with melted mozerella cheeze and chives.. mmmmm Cost you about 20 25 bucks to feed 2 or 3 people easily. For another 5 or 10 $'s you can sub chicken for two salmon fillets or steak fillets..
