Not all recipes serve 6-8. However, a large number of them serve 6-8 because it's a good serving size for a dinner party.

I had the same problem. For me it's just my husband and I. I have found the solution tho!!! AllRecipes.com. You can adjust the recipes to serve how many you want. It will then adjust the measurements for that many people. For example....if you're making Banana Crumb Muffins by Lisa Kreft (the recipe is on AllRecipes.com) for 10 servings it says to use 1 1/2 cups flour. But if you want to make 30 servings, it automatically adjusts it to 4 1/2 cups flour. It will only adjust the ingredients tho. You can print the recipe with the desired # of servings, but the directions will not adjust and the comment the submitter makes about the recipe will not change. You can also change it from US to Metric system if you need to.
This is my most favorite recipe website! They are real recipes by real people. You can also print the recipes on index cards if you want to! You get a recipe box that holds a whole lot of recipes. I have 311 recipes in my box and I still add more all the time from the site. You can also submit your own recipes to your recipe box or for everyone to use. In the recipe box you can categorize the recipes just like you would at home -- or should do!! I never have time to sit thru mine and do that!!!
For the recipe above from the site, I don't add the extra crumb topping to the muffins, mostly because I never remember it until the muffins are already in the oven. You can also use this recipe for banana bread, but I have found it best to use smaller than regular loaf pans and you need to up the time to about 50 or 55 mintues, depending on your oven.

Many recipes are written to accomodate a family (4) but today's thinking allows for a little extra for the bigger eater or to insure enough for guests, since you wouldn't want to run out of food at a dinner party.
Also, many food ingredients are packaged this way, so when you cook, it is easier to use the whole thing rather than having some ingredients left over that you might not have any further use for.
But in any case, it is not that much of a problem, since most recipes will scale easily, either to make less, or make more.

It's all to do with portions 6 large or 8 medium if you want 4 divide by 2 etc. And they are usually based on dinner party's. There are a lot of serves 4 that would be enough for 6 if we ate sensibly.
