Hi, you see Iam from Canada, not sure what type of restaurant you want to open, example: fast food, dine in, just walking up to a window and grabbing your food? What I have heard of Manhattan is a very fast pace place sorry if I am wrong, so if it is maybe half fast food, and the other where people came sit down and relax while eating. well sorry but that's all I can come up with. I wouldn't do causal foods, like burgers, especially in Manhattan. There are too many 'big guys' like McDees and BK who will steal all your customers. Do something original, perhaps specialize in things you don't often think about in North America... like African or Australian or... well, I dunno... something that isn't already over-done. But don't forget that food's only half the package. You won't get any customers if the place doesn't look nice, and (this depends on what you choose), you should decorate it to reflect the types of food you serve. Have you ever noticed how Chinese restaurants have a lot of dragons and pale women with black hair?

I suggest organic vegan raw. You'd be a rarity and a big hit with the health minded. Check out www.ecopolitan.com. It's located here in Mpls, but the proprietor would give you lots of free advice, I'm sure!

Italian food is a good idea, also get someone that know a littler about Latin food. That area you find a lot of Italians and Spanish. Good luck
