I have done this with pigs feet. In a large kettle, add half a dozen or more pigs feet with lightly salted water and peppercorns and some bayleaves. Boil for many hours until the meat has seperated from the bone. Fish out the bones and add chopped onion, carrots, celery, etc and add more water if necessary and boil until veggies are tender. Chill overnight in the fridge and the soup will then have jellified and can then be eaten cold with a sprinkling of cider vinegar, black pepper and served with black bread. Gelatin comes from the foot of hooved animals so this should work very well with cow's feet.It is fantastic!

Ingredients
2 cows feet, cut in sm. pieces
5 fresh chopped carrots
1 md onion, chopped
1 (16 oz.) can green peas
1 (unfrozen) (10 oz.) pkg. frozen chopped spinach
2 pk canned biscuits
2 ts salt
1/2 ts pepper (black)
1 ts crushed red pepper
3 tb hot sauce
2 capfuls vinegar
Instructions
Fill large pot with water. Boil cows feet until tender, with salt,
pepper (black and crushed), vinegar and hot sauce, then add spinach, carrots, onions and peas. Cook until almost done. Then add biscuits. Make sure there is lots of juice.

add in some veggies like carrots
