Is it okay to do treadmill interval training (fartlek) every day, or should it be done only on occassion because of the intensity?

The best training is High Intensity Training. However this is not recommended everyday. Interval training is less stressful on the body. You can do it everyday as long it is under 20-25 minutes (assuming you are going 80-90% of your max intensity).

Also I'd recommend switching btwn speed intervals and incline intervals on the treadmill

There's no real harm in doing it everyday, but it's best to mix it up. Your body tends to get use to something if it's done repetitively. If you want to do interval everyday you can change your intervals - especially on a treadmill: one day do speed intervals, the next incline intervals, then speed and incline intervals.
