I use celery, bell pepper, onion, zucchini, carrot, garlic, red wine, olive oil, diced tomatoes, tomato sauce, and tomato paste. Saute the veggies in the oil, add red wine and let alcohol cook out, add diced tomatoes, tomato sauce, and tomato paste. Bring to a boil, reduce heat, and let simmer for approx. 15-20 minutes.
Sometimes I add meat. If it's raw meat, I cook it first, then follow the rest of the recipe. If I add cooked meat, I add it after the tomato products and follow the rest of the recipe.

I always start with a piece of pork or two in the bottom of the largest pot I own with some olive oil and then I add a pound or two of ground beef. After that cooks on medium heat for a while and the ground beef is almost browned I add minced garlic (8 cloves), chopped white onion (1 large) and sweet red peppers (2 large). I let that cook until the onions start to carmelize and then I put in 4 cans of tomato puree, 4 cans of tomato paste and 1 puree can full of water. I season it with oregano, basil, crushed hot red pepper, salt and pepper, parmesan cheese, and 1/3 cup of sugar. Bring up the temperature 'til it almost reaches a boil and then reduce and simmer for an hour or more, stirring occasionally. I take the pork pieces out before I can it in the pressure cooker.

Saute fresh diced onion, crushed or minced garlic, and diced green pepper in olive oil. Add tomato sauce and diced or crushed tomatoes. Season with oregano, salt, pepper, basil, and a few fennel seeds. You can also add red wine, mushrooms. Cook for an hour or so on very low. Taste, adjust the seasoning. Add a pinch of sugar if sauce is too acidic.
If you want meat sauce cook ground beef, ground turkey, or italian sausage (without the casing) with the vegetables at the beginning.

1 sm can tomato paste
basil
oregano
2 bay leaves

chop onions and garlic, fry them till golden brown and soft. add a spoon of sugar to caramelise. add a tea spoon of curry and add chopped vegetables such as courgetts, carrots, peas, any other veggie i have that i think is good for this mix. i usually add mushrooms too.
when they are cooked, i add tomato pure i make. i usually wash the tomatoes and just use the food processor.
when i used to eat meat, i used to replace some of the veggies with some meat. so first i used to cook the carrots, than the meat and the other veggies.
sometimes i also add wine to the sauce. it gives a good taste. i leave everything to simmer for at least half an hour on low.
