I have a regular-sized muffin tin that I want to bake a meatball recipe in tonight for dinner, and they need to be completely cooked when I pull them out of the oven. I am not wanting to finish cooking them in a sauce after baking. Does anyone have a good recipe I can use? I really appreciate everyone's input in advance. Have a great day folks!

1/4 cup minced onion
1 tablespoon vegetable oil
2 pounds lean ground beef
2 eggs
3/4 cup bread crumbs
1/2 cup whole milk
1/8 teaspoon salt
1/2 teaspoon pepper
2 teaspoons onion powder
1/2 teaspoon garlic powder


Preheat oven 400° F. Grease baking sheet lightly with oil.

Add 1 tablespoon oil and onions to small skillet. Cook over medium heat, until tender, about 3 minutes.

Mix remaining ingredients together in bowl; add onions. Mix until blended, using a large serving spoon.

Shape beef mixture into 1- to 2- inch meatballs; place on baking sheet.

Bake until thoroughly cooked, about 10 to 12 minutes.

First recipe is for a savory sauce. Use lo-so canned ingredients for it. The second is a recipe for meatballs ... just use the savory sauce on them. Swedish Meatballs in Sauce 1 (1 lb.) pkg. frozen plain meatballs (not the Italian kind) 1 can cream of mushroom soup 1 can French onion bouillon (or 1 cup beef bouillon) 1 cup sour cream 1 tsp. Worcestershire sauce 1 dash Tabasco sauce 1/4 cup milk Cracked black pepper Mix sauce ingredients together and mix in meatballs. Cook on low until heated through. Serve with noodles or rice. _____________________ Meatballs 1 lb. Ground Beef 1/2 lb. Ground Pork or Veal Salt & Pepper to taste 1 or 2 Cloves Garlic, Minced 2 Tbsp. Fresh Chopped Parsley 2 Tbsp. Grated Parmesan Cheese (<--high in sodium, may want to use ½) 1 Egg 1 Cup Soft Bread Crumbs 1/2 Cup Water Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Baked Meatballs
1/2 pound ground pork
1/2 pound ground lamb
1/2 pound ground round
5 ounces frozen spinach, thawed and drained thoroughly
1/2 cup finely grated Parmesan
1 whole egg
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley
1 teaspoon garlic powder
1 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs, divided

Preheat the oven to 400 degrees F.
In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.

Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.

I cheat - I use the meatballs from the freezer section at the grocery store. You can do this recipe with regular meatballs, but it's faster with the frozen ones.

2 bags of meatballs
2 large onions
2 large bell peppers
2 packs provolone cheese

place meatballs in layer on baking sheet - heat as directed. Slice onion and bell pepper and saute till onions are clear. Put veggies over cooked meatballs, cover with cheese and return to oven till cheese is melted and starts to brown. Serve with mashed potatoes or cooked pasta.

mix together , one med , pk, hamburger, two itailian sausage links, your fave, flavor, one egg, tea. garlic powder, one half tea. basil one tea, oregano, mix well scoop out palm size peices, flatten place three or four pepperoni slices on each, spinkle with mozzarella cheese about one or one and a half tlbs, on each roll in to meatballs, place in the muffin tins, bake 350 for forty five mins, serve anyway you like i like to eat them with mashed potatoes, or simmer them in tomatoe sauce . very good
