I discovered by accident this a couple of weeks ago. I always crave something really healthy to eat, but it always seem to take forever to make a healthy meal. Wrong, I did it. Very simple. Take skinless, boneless chicken breasts - for two people three will be enough (1 package). In a frying pan, saute green onion, yellow onion, celery, with salt/pepper, butter or pam spray or a little of both. After about ten minutes, add your chicken, start browning it a bit for about another ten minutes - then add about a 1/4 cup of water and a 1/4 cup of chicken broth. Add a lid and steam the chicken with that for about another 20 minutes on low-medium heat. Throw in 10 minute rice in the microwave - only takes 8 minutes for 4 servings. Steam another vegetable for that last 20 minutes, or nuke a can of vegetables for 2 1/2minutes. The chicken comes out moist and tasty. I added cajun spices to it as well. I bet green, red, and yellow peppers would be good too. Very easy and very good. In the end there's about 40 minutes altogether to make this meal, but it is a good healthy one.

OK I call it Chicken Stuff.
4 boneless chickens breast cut into bite size pieces. Boil them until they are no longer pink. Then place them in a casserole dish.
One box of stove top stuffing make as box says.

Then take one can of cream of mushroom soup
One 16oz. tub of sour cream and mix them together.

Pour the soup mixture on top of the chicken spreading it out all over it evenly.

Then take the stuffing and sprinkle it all over the top of the soup mixture.

Then Place the casserole dish in the oven 350 degrees until the stuffing becomes crisp and the soup mixture is bubbling.

My family and friends go nuts over it. It a bit hit every time.

I think easiest would have to be one of the many kinds of omelletes one can make. I fill a omellete in the pan with cooked mushrooms, sprinkled grated cheese and a little bit of herbs. Fold over and seal, serve with freshly slices of tomato and pita bread- delicious! That's the simplest & easiest I would say.

Marinate raw and cleaned shrimp in olive oil,cayenne pepper, paprika, minced garlic,and lemon juice for half hour at least or do it the day before so its ready for the next day.....Get some skewers..[soak them first] put the oven to 450.....put the shrimp skewers in the broiler for two minutes each side!!! They come out so yummy! Serve with minute rice and a vegetable! Its easy and tastes great! Good luck!

I would have to say a quesadilla (USING THE MICROWAVE)
Just take a totrilla and springle cheese on it. Slice up an avaocado and lay on the tortilla. Then, pur some salsa for that added KICK. fold the tortilla in half, microwave for 1 1/2 minutes---and whala!

Taco soup

1 can of tomatoes w/chilies
1 can of red beans
1 can of black beans
1 can of corn
all undrained
1 package of ranch dressing mix
1 or two packages of taco seasoning (more tastes spicier)
1 can of water
heat throughly not allowing to boil but to just get really hot
serve with tortilla chips

total cook time is 20 min

Pasta and sauce. Start with a can of stewed tomatoes and a can of toamto paste. Mix them together, add garlic, oregano, and other spices. If you want to add cooked ground beef, go for it. You can cut up veggies to add or not. Now boil up some pasta and you're good to go.

Baked macaroni and cheese. Can't get any more simple than that. And my family loves it.
