The simplist way I do it is to make up my favorite meatloaf mixture and stuff the peppers and bake. Cover with a favorite tomato sauce too. Comes out great.

I'm not sure of the exact measurements but this is what I use
Good sized green bell peppers cut the tops off and clean them out.
Use ground beef that is at least 90% lean mix ( or mix 1/2 ground beef and 1/2 ground pork) uncooked rice, small can of tomato sauce, crushed garlic, salt, pepper and sliced mushrooms.
Mix well and stuff the green peppers. Place stuffed peppers in a deep dish.
In a separate bowl mix a big can of tomato sauce, a few dashes of worshire sauce and crushed garlic and pour over the peppers.
cook at 375 for about 45 minutes to an hour.

4 large green or red bell peppers
1/2 pound lean ground beef
1/4 cup finely chopped onion
1 tablespoon chopped pimiento
1/2 teaspoon salt
1 1/2 cups frozen corn kernels, cooked and drained
2 teaspoons Worcestershire sauce
1 teaspoon prepared mustard
1 can (10 ounces) condensed tomato soup, undiluted
PREPARATION:
Cut a slice off the top of each pepper. Cut out core; remove seeds and white membrane. In a bowl, combine ground beef, chopped onion, pimiento, salt and corn. Spoon mixture into peppers. Stand peppers up in slow cooker.
Add Worcestershire sauce and mustard to tomato soup; pour over peppers. Cover and cook on low 6 to 8 hours or until peppers are tender.

Stuffed Bell Peppers
Ingredients
4 md Green Bell peppers*
1/4 c Vegetable oil
1 md Onion, finely chopped
2 Cloves, minced garlic
1/2 lb Ground beef
1/2 ts Salt
1/2 ts Pepper
1/2 ts Thyme
1/2 c Drained stewed tomatoes
1 c Cooked rice**
1 tb Parsley
Instructions
1. Cut top off each pepper and remove seeds and veins. Blanch in boiling water for 3 to 4 minutes. Remove and let cool.
2. In a skillet, heat oil, add onion and garlic and saute for 4 to 5 minutes.
3. Add meat, salt, pepper and thyme and cook until meat is browned.
4. In a large mixing bowl, combine the meat, tomatoes, rice and parsley.
5. Stuff each pepper with the meat mixture, place top back on each and bake in a preheated 325 degree F. oven for 20 to 25 minutes.
*You may use yellow or red peppers as a substitute for eye appeal. One of my favorite serving tricks to use green, red, yellow peppers in this preparation. Then, use a large, well garnished platter for the cooked peppers. If you use a creole type suace, the affect is truely spectacular.
**I have from time to time cut the peppers in half lenghtwise in order to add plate coverage. This is especially important if the peppers are small. It gives the appearence of quantity with out the bulk. When I do this I increase the cooked rice to 1 1/2 cups. Your mileage may vary!

Take sausage out of it's casing and put it in the pepper instead of ground beef!! It's called Polish stuffed peppers and it's great.

6 LARGE GREEN PEPPERS
1½ # OF GROUND BEEF
SALT TO TASTE
PEPPER TO TASTE

1 CUP OF COOKED RICE PUT EXTRA WATER IN DRAIN AND SAVE WATER
1 VERY LARGE CAN OF CAMPBELL'S TOMATO SOUP
CUT OFF A THIN LAYER FROM THE TOP OF THE PEPERS AND REMOVE SEEDS.
MIX GROUND BEEF WITH SALT, PEPPER, RICE GARLIC AND 2 TABLESPOONS OF TOMATO SOUP. ADD SOME RICE WATER TILL VERY MOIST.
STUFF PEPPERS WITH MEAT MIXTURE AND MOUND. PLACE IN A ROASTER SPRAYED WITH PAM. . MIX TOMATO SOUP WITH 1/2 CAN OF WATER. POUR OVER STUFFED PEPPERS. BAKE FOR 1-½ HOURS AT 350º.

6 lg green peppers
1 lbs ground beef

1 16 oz can tomato cut up
1/2 c rice
1/2 c water
1 tsp salt
1 tsp worcestershire sauce
1 c shedded american cheese
cut tops of peppers, discard seeds and membranes. chop enough of the tops to make 1/4 c. cook whole green peppers uncovered in boiling water 5 min and drain. sprinkle insides with salt. skillet cook ground beef, onion and chopped green pepper untill meat is brown and veggies are tender. drain fat. add undrained tomatoes, uncooked rice, water, salt worcestershire, and dash of pepper. bring to boil reduce heat. cover and simmer 15 min till rice is tender, stir in chees. stuff the peppers. bake covered at 350 for about 30 min.

they are quite simple to make use 1/2/and 1/2/ raw ground meat and cooked rice i season with salt pepper garlic and oregano and basil and chopped onions and pepper parts chopped and i stuff them in the pepper you can cut in half and lay them flat or cut tops off and lay them up and then i add a marinara sauce or spaghetti sauce and cook at 350 covered for 20 minutes and uncover for another 20 minutes....

Pretty basic recipe....brown some meat and onions...add garlic and salt and pepper and marinara sauce.(you can also use rice but i prefer none) stuff into peppers and top with plenty of cheese...cook for 20 minutes..enjoy
