Actually any wild ungulate is considered to be venison. This includes deer, moose, caribou, elk, etc.

I only shoot doe to put in my freezer, if I happen to shoot a young button buck by mistake, I give it to some friends of mine that will process him, I assume you mean what animal we choose if we are going to eat the meat..

Deer and it is very lean so many people mix it with other more fatty types of meat like hamburger or pork sausage. But of course many like it as it is too.

many people think venison comes only from deer, it actually can come from most any big game animal such as moose, caribou, elk, etc.
