I've cooked and mashed sweet potatoes with a bit of salt, then dotted the dish generously with a homemade pecan honey butter, then a few marshmallows for the die-hards who won't eat sweet potatoes without them!

Pecan Honey Butter Recipe:
4 sticks unsalted butter (1#), softened
1/2 C honey
1/2 C pulverized pecans (do it in the food processor)
Blend the softened butter with the honey and pecans and cool in the fridge for an hour before using. Melt on sweet potatoes in their jackets, mashed sweet potatoes, or other vegetables. Yum!

The all-time favorite Green Bean Casserole recipe uses 1 large package frozen cut green beans, 1 smaller package french-sliced green beans, 1 can mushrooms, 1 can mushroom soup reconstituted with 1/2 can milk, and french fried onions.

Cook the green beans together and drain. Save the cooking liquid to make your gravy later (lots of vitamins in the juice!). Reconstitute the mushroom soup with 1/2 can of milk and blend into the beans with the mushrooms. Put into an appropriately sized baking dish and cover the top with the french fried onions. Bake at 350 degrees for about 45 minutes - 1 hour.

Go to the Kraft website and sign up. They have a free magazine that has tons of delicious recipes. I've seen a recipe for sweet potato casserole. Do a search there, and you'll find it!

I like to mash cooked sweet potatoes (cook them from fresh ones, not canned!) with a Tablespoon or two of adobo (the paste that comes in canned chipotle peppers) and the juice from 2 limes. I also add some butter and a little garlic powder. It's delicious and it freezes extremely well (but you won't have any leftovers). Try it!

This is completely different from what you're asking, but maybe you can give this a try.

How about cutting the sweet potatoes into thin slices, dipping them into tempura batter, and frying them.

It's not a typical Thanksgiving dish...but I'd personally love to have it for Thanksgiving.

Here is my "Favorite Green Bean Casserole";
1 can (10.75 oz.) condensed cream of mushroom soup, cream of celery soup or cream of chicken soup.

1/2 cup milk
1/2 tsp. pepper
2 cans (14.5 oz. each) French-style green beans, drained *
1 can (2.8 oz.) French-fried onions

Heat oven to 350 degrees
In 2 qt. casserole or 8 inch square glass baking dish, mix soup, milk, and pepper. Stir in beans. Sprinkle with french fried onions.
Bake uncovered 30 to 40 minutes or until hot in the center.

* 2 bags (1 lb. each) frozen cut green beans can be substituted for the canned beans. Cook as directed on bag, drain.

Here is a foolproof recipe for Candied Sweet Potatoes:

6 medium sweet potatoes (2lb) *
1/3 cup packed brown sugar
3 tblsps. butter or margarine
3 tblsps. water
1/2 tsp. salt

Place sweet potaatoes in 2 qt. saucepan; add enough water just to cover potatoes. Heat to boiling, reduce heat. Cover and simmer 20 to 25 minutes or until tender when pierced with a fork; drain. When potatoes are cool enough to handle, slip off skins, cut them into 1/2 inch slices.
In 10 inch skillet, heat remaining ingredients over medium heat, stirring constantly, until smooth and bubbly. Add potatoes. Gently stir until glazed and hot.
(You can also put marshmallows on top of these and put them in a warm oven until they melt)

*1 can (23 oz) sweet potatoes, drained and cut into 1/2 inch slices, can be substituted for the fresh ones, just skip step 1.

Well, I hope these help you have a wonderful Thanksgiving and make lots of memories with your family!! Good Luck!

Sweet Potato Gratin
1 tablespoon butter, plus 6 tablespoons, chilled and cut into small cubes
1 cup freshly squeezed orange juice
1/2 cup brown sugar
1 teaspoon ground ginger or 1 tablespoon fresh ginger
Pinch freshly grated nutmeg
Salt and white pepper
1 (12-ounce) can crushed pineapple with juice
4 pounds sweet potatoes, peeled and sliced into 1/8-inch pieces

Preheat oven to 350 degrees F.
Use one tablespoon of butter to grease a 9 by 13-inch baking or gratin dish. Mix together orange juice, brown sugar, and spices, then add pineapple. Layer slices of sweet potatoes in the dish, then dot with butter. Top with pineapple mixture. Season each layer with salt and pepper. Repeat this process until all sweet potatoes are used up, ending with pineapple mixture.
Bake in oven for 40 to 45 minutes until sweet potatoes are tender when a pairing knife is inserted. Baste gratin with excess juices every 10 minutes. The top should be bubbly and brown. If the top gets too brown or starts to burn, cover with aluminum foil and continue cooking until sweet potatoes are done.

Sweet Potato & Marshmallow Bake
Ingredients
3 pounds (about 6 large potatoes)
or 2 (29-ounce) cans (drained) sweet potatoes
1/2 cup packed brown sugar
1 Tablespoon maple syrup
1/2 cup heavy cream or evaporated milk
2 tablespoons cold butter or margarine
1 tablespoon vanilla extract
1 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup miniature marshmallows

Instructions:
Peel and cut sweet potatoes into pieces about 1 inch square. This is an approximation. The smaller the pieces, the quicker they will get soft. Place the pieces of sweet potato in a large saucepan. Add cold water to cover all of the potatoes.
Bring the water and sweet potatoes to a boil over high heat.
Lower the heat, cover and simmer 20 to 30 minutes or until tender. Drain the potatoes.

* Start here if you are using canned or microwaved potatoes *
Preheat oven to 350 degrees. Place potatoes, brown sugar, maple syrup, cream, butter, vanilla, and spices in a large bowl.
Beat until smooth and fluffy. You can use a potato masher to mash down the mix and then a fork or egg beater to whip the potatoes, or just use an electric mixer. Transfer the whipped sweet potato mixture into a greased 13x9-inch or 3-quart baking dish. Top evenly with marshmallows. Bake the potatoes uncovered for about 25 minutes or until heated through. The marshmallow topping should be golden brown, not burnt.
