Vegetarian Sheppard Pie

4 medium potatoes, peeled and quartered
1/2 cup potato water
1/4 teaspoon salt
1/4 teaspoon onion powder
8 ounces black beans or
1 1/2 cups garbanzo beans, cooked
1 cup frozen corn, thawed
1 cup frozen peas, thawed
1/3 cup peanut butter
1/2 cup water
paprika

Preheat oven to 350. Place potatoes in a large saucepan, and add just enough water to cover. Boil for 15-20 minutes, or until tender.
Drain potatoes, reserving liquid. Mash cooked potatoes with hot water, salt, and onion powder.
Add additional liquid if desired. Set aside. Combine beans, corn, and peas in a 9 inch pie pan. In a separate bowl, whisk together peanut butter and water, until smooth. Pour sauce evenly over vegetables. Top with mounds of mashed potatoes. Sprinkle with paprika. Bake for 30-40 minutes, or until potatoes start to brown.
Serve hot or at room temperature.

I see that you have been provided with some very good recipes for Shepherd's Pie. Here is a quick and easy one that I do with ground lamb.
1 pound ground lamb browned in fry pan. Add in some chopped onion and 2 diced carrots.
1 cup of frozen peas added to browned lamb, cook until thawed out and heated through.
Add 1 pkg. of Club House Shepherd's Pie Seasoning and follow the instructions on package.
Add some chopped parsley, some worcesterschire sauce, ground pepper...(I wouldn't add salt because the pkg. of seasonings has enough salt in it)
Put mixture into a casserole.
Top with some instant mashed potatoes (quick and easy)
Place in 300 degree oven just until heated through.
Serve with salad and some V8 tomato juice.

Ground beef shepherd's pie

Ingredients

1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

Preparation

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.
6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Serves four.

Here is a easy recipe!!!
Shepherd's Pie
1 small onion
1 1/2 pounds ground beef
2 (8-ounce) cans tomato sauce
1 1/2 cups mixed vegetables or niblet corn, prepared
Salt and freshly ground black pepper
8 to 10 medium red new potatoes
1 1/2 cups milk
12 tablespoons butter
1/2 cup sour cream
2 cups instant biscuit mix

Beef Layer: Saute onions in 2 tablespoons butter. Add ground beef. After beef is browned, add tomato sauce; Mix in vegetables. Add salt and pepper, to taste.
Potato Layer: Peel and slice potatoes 1/4-inch thick. Cook in boiling water for approximately 15 minutes or until fork-tender. Whip potatoes with electric mixer; mix until moderately smooth. Don't over beat them; a few lumps are nice. Add 1/2 cup heated milk, 1/2 cup butter, and sour cream. Salt and pepper, to taste. Whip until mixed. Adjust thickness by adding more milk, if desired.

Biscuit Layer: Combine biscuit mix and 1 cup milk. The mix should be thinner than normal biscuit mix but not runny.

Preheat oven to 350 degrees F.

Spray a 9 by 9 by 2-inch pan, or any similar casserole dish. Layer half way up with the mashed potatoes. Next, spread a layer of mixed vegetables or niblet corn on top of potatoes. Then add a layer of the meat. Pour biscuit mix over meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes until top is golden brown.

Easy Shephards Pie

2 pounds of ground beef
8-10 small potatoes
2 cans of corn
1 package of shredded cheddar cheese

Cook ground beef
Peel and boil potatoes then mash
Layer in a 9 x 12 baking dish starting with the beef, then the corn, add mashed potatoes, top with cheese and bake on 350 for about 15 minutes..

YUM!!!

I start with a ready-made pie crust in a 9in pie pan.

Brown 1 pound of ground beef with onions, salt & pepper to taste. (I like garlic pepper mix) Add in one can of cream of mushroom soup (no water or milk). Add in the veggies you like, frozen or canned (I use 1 can each corn & peas) heat it all through, it should be really thick. put it in the pie crust. Top with mashed potatoes, fresh or boxed, which ever you perferr. Bake in a 350 oven until the crust is done and the potatoes have a bit of color and enjoy.

this is a reciepe that you can play with to your own taste...have fun and experiment!!

easy..and delicious....my own recipe....

2 lbs ground beef..browned with an onion, stir in 1 can whole kernel corn, 1 can green beans, 1 can diced tomatoes, 1 can tomato soup, mix ,,,heat and put in 9x13 pan...top with mashed potatoes.. cover..heat about 30 minutes...uncover..sprinkle cheddar cheese on top...bake additional 10 minutes (salt and pepper to taste..)

mt mom makes the best brown ground beef put in a cake pan add green beans tomato soup corn onions top with mashed potatos bake when it is almost done top with cheese my kids love it

Try adding brown gravy to the ground beef, then top with green beans, corn, mashed potatoes and shreded chedar cheese.

Start with only the finest shepherds. Season them to liking. Add mashed potatoes and corn and peas. It is delicious.
