I have never found or looked for a recipe for dairy free Bailey's, but what about vanilla soy milk? It's pretty creamy...though not as thick and sweet as condensed milk.

You CANNOT get decent ice CREAM without adding CREAM to the mix! Otherwise, you only get ice MILK, which does not feel the same on your tongue and tastes kind of weak. Just wait until you can get some heavy cream. It's really not a "weird" ingredient, I promise.

use soy milk, but it won't be thick like bailey's because it's a creme....there's some coffee creamers that are dairy free, and i know at one point they had an irish cream flavor...
