make lines in it with a sharp knife... can I ask why you would score a roast?? I have been cooking for forever, and have never heard of that. just curious.

It means taking a sharp knife and making shallow cross cuts across the roast. The only time I have done that is when doing a roast of a fresh ham with the skin on and the skin turns hard during roasting. The scoring helps break the skin into little squares when serving the roast as the skin has now has become very hard. It is a great taste to eat those and even tastes better than the roast itself but loaded with fat.Don't exactly know why you would do it for other roasts though.

There would be several reasons to score a roast.
I score many of my baked stuff to make appealing designs in it. Taking a storebaught full crust pie while it was still frozen and scoring simple designs in it made quite a pleasant reaction. And many of my breads look and bake better when it's scored.
Scoring also allows the inside a more concentrated heat. Even a quarter inch will allow the heat from the oven to gain better access to the inside. Be careful not to score any further than a quarter inch or it will overcook the edges of the cut and become unapealing.

To score something means you take a sharp knife and make slits in the meat or dough or whatever calls for gashing.
