On holiday recently, I had Enchilados with a Chicken/Pepper filling. Since being home, I have bought a mix of Enchilados and packet sauces.

Now have got through the packet sauce and want to make my own sauce/

Texas Red Enchilada Sauce
This sauce can be used with beef or cheese enchiladas. The amount of "heat" in the sauce depends on the type and amount of chili powder you use.
Below for 1 & 1 ½ cups sauce.. see bottom for larger 2cup results
1 tablespoons butter or margarine

1 tablespoons flour

2 1/2 teaspoons red chili powder
3/4 teaspoon cumin

1 teaspoons garlic powder

3 ounces tomato paste
1 1/8 cups water

salt and pepper

1. Melt butter/margerine in a sauce pan.
2. Make a roux by browning flour in melted butter/margerine.
3. Add spices and tomato paste; stir until well blended into roux.
4. Add water gradually, stirring constantly.
5. Heat until boiling.
6. Continue simmering and stirring until desired thickness is achieved.
7. Taste every so often and adjust spices as needed.

I have a recipe for Shrimp Enchiladas, perfect for any night of the week or a dinner party. You can substitute the shrimp for chicken if you prefer. Here goes:

SHRIMP ENCHILADAS CON QUESO
6 servings

Preheat oven to 350F

1 stick butter
1/2 cup chopped red bell pepper
1/2 cup minced onion
1 medium jalapeno pepper, minced
1 garlic clove, minced
1/2 tsp.dried oregano
1/2 tsp. salt
Pinch of pepper
Pinch of cayenne pepper
1 cup whipping cream
12 oz.grated Monterey Jack or Cheddar cheese
1/2 cup sour cream
1 Lbs. uncooked shrimp, peeled and deveined
1 cup chopped green onion
2 medium tomatoes, seeded and chopped
12 9-inch flour tortillas

Hot pepper sauce
Worcestershire sauce

Melt 1/2 stick butter in heavy large pan over medium heat.
Add all peppers, onion (not green), garlic, and oregano,cook until tender, stirring occasionally, about 5 minutes.
Add salt, pepper and cayenne.Stir in cream and bring to a boil, scraping up any browned bits. Reduce heat and simmer 3 minutes.
Slowly mix in 1 cup of cheese, stir until melted. Remove pot from heat. Stir in sour cream.
Melt remaining butter in heavy large skillet over high heat. Add shrimp and green onions cooking until shrimp is just pink, stirring frequently, about 2 minutes. Stir in half of the tomatoes and half of the cream sauce.
Spoon about 1/3 cup of the shrimp mixture onto each tortilla. Roll up tightly. Arrange seam side down in a 9 X 16-inch baking dish. (Can be prepared 2 hours ahead but cover you tortillas and the remaining sauce seperately). Spoon remaining sauce over tortillas. Cover with foil and bake about 30 minutes. Remove foil, sprinkle with remaining cheese, green onions and tomatoes. Serve immediately with hot sauce and Worcestershire sauce seperately. Bon Appetit!

I live in AZ=when i need enchilada sauce, i buy it at the grocery store. YES, I am that lazy:)
