From what I understand, eatting blood is wrong because the animal dies. Is there some Biblical reasoning behind this?

By eatting blood I mean that Jews are not to eat blood in food such as blood sausage, or cogagulated blood jelly.

Jewish people are not to eat meat from unclean animals. In a blood transfusion, we tend to leave the donors alive before, during, and after they give blood. Also, the person getting a blood transfusion doesn't have to drink the blood, the medical community has found that it is more effective if a blood transfusion is given intravenously.

Jehovah God views blood as sacred and forbids his followers to take it into their bodies. It was never meant to be used as a commodity - bought and sold.
Gen 9:4 states -"Only flesh with its soul - its blood - you must not eat".God was informing Noah the significance of blood and that animals had to be properly bled before being consumed.
The command was repeated to the first century Christians where at Act.15:29 Paul admonishes Christians to abstain from blood.
The Bible frequently uses "blood" to stand for "life".This is because the life or soul is in the blood (Lev.17:11)

It's news to me, I thought that blood transfusion refusal was a Jehovah's Witness thing. They refuse because they are not allowed to eat the flesh of other humans, and being given human blood is sort of like cannibalism.

Kosher meat has to be salted to the point that there is no trace of blood in it.
But blood transfusions are not in the same category. Transfusions are there in order to save lives, and they are administered through one's veins.
