Made Pavlovas for years the night before. I turn the heat off and leave the meringue in the oven overnight. It comes out beautifully crispy.
Do NOT put it in the fridge, it will draw moisture and go all soggy.

Hi, my favourite pud....Yeah of course make it the night before it will be fine. Have read some other answers and under no circumstances do not put in fridge. It will go soft and crack. The art is to make sure that it is dry. When baking off leave it for a bit longer than usual, lets face it, its on such a low heat it isnt going to burn. If poss leave it on the baking tray in oven overnight or in your airing cupboard.....Keep it dry then when practically ready cover to your hearts content with that delicious good for you double cream......Happy eating

Of course it will, if there is one thing Meringue does, it is keep well. Shouldnt be a problem at all. Just make as usual and put it in a safe place till time to decorate, covered in a cupboard or something, airtight container if you have one and can make a nice firm one that you can get in and out of it ok :D

Yes of course you can. Just let the meringue cool down after you take it out of the oven, put it in air tight container and pop it in the fridge. just remember that the meringue needs to be completely cooled down before you put it in container- otherwise it will become soggy!

Meringues really need to be made and cooked right before you load them up and eat them. If you leave them overnight, they'll go soft, sticky and the sugar tends to either crystallize on the top or leak out in a syrup out the bottom. You can make them and freeze them, but then they tend to be very brittle once defrosted. It's best to make them on the day.

do not put it in the fridge it will be fine in an airtight container- tip- warm the suger when you make the meringue and it will stop alot of the sweating that sometimes occurs
