Cheese Sauce
600ml (1 pint) Milk, warmed
110g (4oz) Cheddar or Cheshire Cheese, grated
40g (1½oz) Plain Flour
40g (1½oz) Butter
1 tsp Mustard Powder
Ground Nutmeg
Cayenne Pepper
Melt the butter in a saucepan over a low heat.
Stir in the flour and cook gently for 2-3 minutes.
Add the mustard powder.
Remove from the heat and gradually add the milk, stirring constantly to avoid lumps.
Bring to the boil, still stirring, simmer for about five minutes, stirring occasionally.
When smooth and creamy, stir in the grated cheese a little at a time, until melted.
If the sauce is too thick, add a little extra milk.
Season to taste with nutmeg and cayenne pepper.
Serve hot with fish, eggs, broccoli , cauliflower or macroni.

1 tablespoon butter / margarine
1 tablespoon cake flour
1 cup milk.
1 egg
250 ml grated cheddar cheese.
Melt butter in saucepan and remove from heat. Stir in the flour and keep stirring for 2 minutes until flour is cooked. Put back on heat and add the milk. Keep stirring (a balloon whisk works best.) When sauce has thickened, season and add 1 whole egg. Keep whisking. Add half the cheese and turn the heat off. Mix with the cooked macaroni and sprinkle cheese over. Bake at 180 degrees C for 15 minutes.
(Try frying a little bacon beforehand and adding that in layers when you put all in the dish)

Make a roux; Take a tablespoon of butter and melt it in a pan over medium to high heat, when melted add one tablespoon of plain flour and stir for 1 minute to cook of the flour, this is a blond roux, to this slowly add about 500 or 600mls of milk mixing well with each addition of milk, to abvoid and stir out lumps, add milk slowly in portions to maintain the heat of your sauce. When you have added all the milk let it simmer for a few minutes, if it is to thick add more milk, too thin - let it simmer down a while. Stir in about a cup of your favourite grated cheese or so, add a pinch of salt and pepper, then add cooked macaroni and take off heat to serve. Or you could put it in a buttered casserole dish, sprinkle the top with breadcrumbs and more grated cheese and bake it off in the oven for about 30 mins at 190C or around 400f I think that would be.
By the way these are heaped tablespoons not imperial or metric measurements, just dive a spoon into the butter and flour.

Easy Cheese Sauce
INGREDIENTS:
3/4 cup evaporated milk
1 cup finely grated process American cheese
pepper, to taste
paprika
PREPARATION:
Heat milk in a heavy saucepan until steaming hot; do not boil. Stir in cheese, heating and stirring until cheese starts to melt. Remove from heat; stir until all cheese is melted and sauce is smooth. Add pepper and paprika, to taste.
Serve hot with macaroni, on vegetables, or as a sauce for hot dogs or sandwiches.
Makes about 1 cup of cheese sauce.
Spicy Cheese Sauce
This spicy cheese sauce would be wonderful on cauliflower or other vegetables, or try serving it with a brunch strata or quiche.
INGREDIENTS:
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon dry mustard
2 cups milk
1 cup shredded Cheddar cheese
salt and pepper
hot pepper sauce, to taste
PREPARATION:
Melt butter in a heavy saucepan over low heat; stir in flour and mustard until mixture is smooth and bubbly. Do not let mixture brown. Gradually add milk; continue cooking, stirring constantly, until thickened and boiling.
Boil 1 minute. Add cheese and continue stirring until cheese is melted. Season to taste with salt, pepper, and hot pepper sauce.

while the macaroni is still hot melt the butter and put velveta and milk until desired consistantcy. Keep adding milk and butter until it is the way you like it. Or buy Kraft macaroni and cheese in a box.

basic white sauce and add cheese
this is simple
melt a tablespoon of butter with a tablespoon of all purpose white flour
allow it to simmer but not to change colour
Add a cup of milk, a little at a time so that it doesnt get lumpy.
Whisk well after every addition of milk
When u have added the milk, keep whisking til it boils and thickens, taking care not to allow it to get lumpy
At this point u season it, salt, pepper and ground nutmeg
Whisk in a cup of grated cheese, a little at a time to prevent lumps
The sauce is ready

boil a pint of milk' mix together 4tsp of cornflour with a little milk, add to boiling milk stirring all the time.
this gives you a basic white sauce you can add whatever you prefer, cheese, mustard salt and pepper for a tangy cheese sauce, by adding a little ketchup gives it a slightly different taste
for a wine sauce mix half the milk with white wine
add mushrooms, garlic etc to taste (saute any raw onions, garlic mushrooms etc first good cooking

if you want mac and cheese this is the BOOM!
cook one pkg, mac noodles till al dente ,, almost soft
drain.
mix together a pkg . of shredded chedder cheese, a pkg, of mozzerella cheese , and have a pkg, of american slices open and ready to go,,
in baking dish layer noodles, the cheeses, then a layer of noodles then cheese then so on til all is used on each layer spinkle lightly with salt and pepper and stir. before adding cheese slices, last layer should be the slices, dot with butter and pour a can of cream in, bake at 375 till most of the cream is absorbed , after setting it will thicken. sooooo sooooo good.
