I looked long and hard to find this but here you go.
In the early 1900s, the company wasn't known by its familiar fowl moniker and sold other foods in addition to tuna. But fortune shined on them when they became the first food company to can "light tuna." The mildly flavored fish became the company's trademark product, and its owners sought a catchier name for their canned fish. When asked about the flavor of the new light tuna, many customers remarked, "it tastes like chicken," -- so the company began to market the light tuna as "Chicken of the Sea." The ad campaign was so successful that the company eventually renamed itself after their famous slogan.

In the "old days", fishermen referred to the white albacore tuna as "chicken of the sea". It was called this because the white color and very mild flavor reminded them of chicken. The founder of the company thought this would be a unique name for a brand of tuna, and the Chicken of the Sea brand is now known worldwide.

it is just a quote to name something, i hope you know chicken is eaten by every one in the world and most preferred food. So is Tuna for sea food, every body asking for Tuna salad, Tuna sandwich
Since Tuna is preferred food as chicken hence.
