We make both.
The dressing is baked outside of the Turkey, and it has tons of onion and celery in it. So good.
The mashed potatoes are hand smashed, and one batch is made up with lots and lots of garlic and chicken broth.
Try creamed onions, too. Very traditional.

Both. I mix teh cranberry sauce into my potatoes, put th on myturkey, and put the remainting sauce and potatoes in the dressing on my plate

A lot of folks serve both, though I think the dressing/stuffing is the side dish that people really expect to see and are disappointed if they don't get it.
