I know that if I see the Dajaal riding the big donkey around the world I have to become a Muslim. And I know if all the rivers and seas turn into blood I have to become a Christian. But I'm blessed if I can work out your eschatology. What if you guys are right? You are the original middle eastern monotheists, so you might be. What sign do I look for that the end is near, and do you take converts? I am circumcised.

When there is peace on earth and everyone worships Hashem, you'll know the end-times have begun. other than that, its difficult to know if there are "signs".

first we are the only one of the Abramatic religions that dose not encourage or require converts. As long as you believe in G-d and a moral and upstanding member of society you are doing your part.

you could convert but that is to be done only if you want and have done enough research.

as for "What sign do I look for that the end is near" It will be obvious. I hate people (Jewish or non Jewish) that try to say the end is around the corner. When its time it will be clear and obvious to everyone.

By the way, the original Middle Eastern monotheists were the Zoroastarians, not the Jews.

[010:057] O mankind! There has come to you a good advice from your Lord (i.e. the Qur'ân, enjoining all that is good and forbidding all that is evil), and a healing for that (disease of ignorance, doubt, hypocrisy and differences) which is in your breasts, – a guidance and a mercy (explaining lawful and unlawful things) for the believers.

[010:058] Say: "In the bounty of Allâh, and in His Mercy (i.e. Islâm and the Qur'ân); – therein let them rejoice." That is better than what (the wealth) they amass.

[010:059] Say (O Muhammad [sal-Allâhu 'alayhi wa sallam] to these polytheists): "Tell me, what provision Allâh has sent down to you! And you have made of it lawful and unlawful." Say (O Muhammad [sal-Allâhu 'alayhi wa sallam]): "Has Allâh permitted you (to do so), or do you invent a lie against Allâh?"

[010:060] And what think those who invent a lie against Allâh, on the Day of Resurrection? [i.e. Do they think that they will be forgiven and excused! Nay, they will have an eternal punishment in the fire of Hell.] Truly, Allâh is full of bounty to mankind, but most of them are ungrateful.

[010:061] Neither you (O Muhammad [sal-Allâhu 'alayhi wa sallam]) do any deed nor recite any portion of the Qur'ân, nor you (O mankind) do any deed (good or evil) but We are Witness thereof when you are doing it. And nothing is hidden from your Lord (so much as) the weight of an atom (or small ant) on the earth or in the heaven. Not what is less than that or what is greater than that but is (written) in a Clear Record. (Tafsir At-Tabarî)

Most sects of Judiasm accept that everyone and everything will return to G-d. They view the possibility of losing even the tiniest spark of creation as though G-d failed. Needless to say, it's strongly assumed that G-d does NOT fail.
