When it comes to speakers Infinity is a hell of a lot better than Memphis. This comes from experience, both personally and installing wise. Now, as far as subs go, Infinity makes a great sub (very clean, low bass, good sound), but Memphis also makes a hell of a sub (deep, strong, loud). As far as which is better, in my opinion it comes down to usage. If you want more of a SQ setup the Infinity subs would be my choice, but if you want more SPL then I would go with Memphis. However, all the positive qualities of both subs could be totally negated by the wrong enclosure and a bad amp. So take all this into consideration and make your choice from there.

Infinity, of course I'm a bit biased towards them since I've always had Infinity speakers in my home and/or car since 1994.
Currently I have a complete Infinity speaker set up in my daily driver. Infinity Kappa Component 6.5" in the front doors, Kappa 6"x9"s in the rear deck lid, and one Infinity Kappa Perfect VQ 10 for my sub. Someone above mentioned that the wrong amp will negate any improvements made and he/she couldn't have been more right. You could have a fantastic set of Focal's in your car but without clean power getting to them, they are next to worthless.

As bl_arias mentioned, the enclosure is what makes or breaks a subwoofer in sound quality (SQ) or sound pressure levels (SPL).
Here is some info on enclosure types (and other tips):
