Tell her what you said in the question, that you want to be with someone your own age and you wish you'd met her later in your life than you did.
Tell you you don't want to hurt her feelings but your lives are too different and SHE needs to be seeing boys her own age.

She is 15 and you are 18. What do you intend to do, stay with her and marry her for fear of hurting her feelings? That certainly doesn't make sense.
Tell her you would like to date other people more your own age, plain and simple. It isn't her fault - make that clear! Be honest with her. Her feelings will be hurt. She will cry and tell everyone how horrible you are, but she will get over it far better now than if you wait a long time or if you just "disappear". Be honest, first and foremost.

if both of you love each other, you can still be together but you have to be careful, depending on where you live. I am 21 and I like 16 year olds, but everyone thinks i am an idiot. You are only talking about 3 years difference. It is not bad at all. Just be careful and don't go too far until both of you are 18

By law she is a child and you are considered an adult. It would be cruel to continue to string her alone. You have to let go not only to avoid hurting her more, but you must think about the legal ramifications of your relationship. It will take her time but she will heal and be able to get on with her life. The longer you put this off, the more difficult it will be for the both of you.

Your feelings are natural. You have outgrown your girlfriend, and you want to start living your life as an adult.
Break up with her, nicely and sensitively. Explain that the age difference has become a problem; it has nothing to do with her as a person.
She will be upset, but also free to date someone closer to her own age who is going through the same things.

Just tell her, be like I'm older now and, things are getting to be a bit different now. I think it would be best for everyone involved to if we just break up. We can be friends and all that, but my feelings have changed. I don't want to hurt your but its for the best.

Break up with her...your relationship is illegal at this point...break ups hurt, that's just the way of the world, but you should never stay with someone you don't want to be with (or shouldn't be with) simply because you don't want to hurt their feelings...
Explain the situation to her...she'll not like it but she'll get over it...and you'll both be fine...
Don't drag this out...do it soon...before something happens that gets you into trouble...

pretty tough question.......my advice is, just follow your heart........do u still have feelings for her??? if yes, continue the relationship for 'safety' reasons.....what if she'll never want to see u again if u want her back??? since u've more freedom, use your time wisely......if u're feeling empty, call a few guy friends n' have tea together.....
