I am looking for a recipe for a squid dish I once had. It consisted of strips of squid that had been marinated in lemon juice for 24 hours, which caused the acetic acid to "cook" the squid. I would like to know the name of the dish and how it is made.

Calamari MEANS squid - - it's my favorite.

You have a great recipe there. When you marinate it in the lemon juice, keep it in the refrigerator, covered, and don't forget to stir it from time to time.

When you're ready to serve it, just transfer it to a serving dish and sprinkle some fresh parsley on top. MMMMMMMMMMMMMM !!!

When seafood is "marinated" in citrus juice it "cooks" and this is called a ceviche. I am not sure of the dish you are refering to, but here is a recipe for a seafood ceviche salad.

1/2 lb shrimp, peeled and deveined
1/2 lb squid, cleaned and sliced into rings
1/2 lb scallops, quartered if large
2 lemons, juiced
2 limes, juiced
1 red pepper, finely diced
1 green pepper, finely diced
1 yellow pepper, finely diced
1 red onion, finely diced
2 jalapenos, seeded and finely diced
1/2 cup whole cilantro leaves
1/2 cup whole parsley leaves
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
Tortilla chips or crackers
Spread the seafood evenly in a large, non reactive pan. Mix all of the citrus juice and pour over the seafood. Cover and refrigerate for 2 hours or longer. The citrus juice will cook the fish throughout. Add the rest of the ingredients and season with salt and pepper. Serve with tortilla chips or crackers.

Ceviche Calamari

Ingredients:
for every pound of squid:

1/4 Cup water
1/4 Cup lemon or lime juice
1/4 Cup white vinegar
1/2 Cup diced red onion
1/2 Cup diced green bell pepper
1 c. Tbsp. crushed chilies or Tabasco sauce

Cooking Instructions:
Clean squid by pulling out the viscera including cartilage. Rinse in cold water and cut into half inch rings.

Combine all ingredients and marinate for 24 hours.
Serving Suggestions: Serve cold as a salad or appetizer.

To clarify some answers Calamari is a breed of Squid, and the most highly favoured by fisherman. Arrowhead squid is the other commercialy caught species.

To answer your question, like someone already said, you said it, marinate the squid overnight in lemon juice, with maybe coriander or parsley or someother herbs of your liking. And there you have it.

It's called "ceviche" when you use the acid in lemon or lime juice to cook seafood.

hmmmm, it sounds like calamari. but calamari is deep fried. so I'm not sure.you can yahoo it on the main website I'm sure.
