The simple answer is that you can't!
Good knives are not cheap. They are very expensive. Why? Because you are paying for some designer to work out the perfect balance point, the quality of the stainless steel and the ergonomics of the handle.
Cheap knives on the other hand are just that - cheap. The handles fall off, the blades continually blunt and the knife tends to tear food rather than cut it.
What you want is a middle of the road knife. You can pick these up at target or even k-mart. You get a decent handle and blade, but not the precision of a truly great knife. Try to get one made in Japan (China is not Japan either - China is another word for Cheap!!!!).
Better still, save your money by buying a cheap knife or two, and then take your $250 to a specialty knife shop and buy a decent knife. The guy at the store should be able to give you something decent for your money.

The problem with buying knives for a cheap price is that they're almost always cheaply made. If your into that sort of thing, try the Bud K catalog. They have a lot of cheap, fancy looking, garbage knives for 35yo men liviving in their mother's basement to beat it to. Every now and then they have one or two decent knives, but usually it's just page after page of feces. ++ They also sell dragon t-shirts and warlock staffs and other crap that will ensure your penis will never be seen by a woman ever once purchased. Again, if your into that sort of thing......

i bought a lot of muela knives from them..
youre never going to find a good knife cheap..if youre looking for a good bowie i would suggest going with SOG knives (they make knives for the Navy Seals) if you want a cheap knife.. just go to walmart.

Try garage ,yard sales etc. . I picket up a good one once for $5.00 ,it was worth aprox. $50.00 at the time.Another time at a used store I picked up a large Buck knife for $20.00 that used to cost $120.00. PS I just came home from a gunsmithing store where the knife I purchased for $5.00 is now $99.00 before taxes.

I'm afraid good knives aren't cheap.
You can try e-bay, or a hunting/outdoor show, or maybe craigslist.
If you are going to try and get a good one for that money, you'll need to look for a used one with a name brand.
