I am taking an advance foods class and this week we are planning on making a pie just before thanksgiving. My one problem is that my table of six girls has a different tast in pie.

Four of them love pumpkin.

I myself love chocolate pecan

and we all love Apple.

When I said let's make apple they turned that down and said it was too simple for an advanced class, even after I suggested making a lace top crust.

So my question is, how to I appease all the girls and still make a pie that we will all enjoy?

Use tart pans and make mini pies so that everyone can have what they like....plus a few more!

Make a pie with 1/3 pumpkin, 1/3 apple and 1/3 pecan. Drip some chocolate on top of the pie with some design when it's done.

Oh Boy, I'm a guy, pleasing one is all I can handle but 6? Holy Smokes, all I can do is give it a try. Looks like Apple is the pie to spiff up, so here I am, at the mercy of 6 with just a piece of paper in my hand, a recipe, my humble offering.

Butterscotch Apple Crumb Pie

Ingredients

(6 servings)<<< Notice? 6?

1 1/2 ts Lemon juice
1/2 c Sugar
1 ts Cinnamon
1 ea 9" unbaked pie shell
1 pk 6 oz. butterscotch chips
3/4 c All-purpose flour
4 c Pared,sliced tart apples
1/4 c All-purpose flour
1/8 ts Salt
1/4 c Butter
1/8 ts Salt

Instructions

Preheat oven to 375 degrees.In large bowl,combine lemon juice and apples;toss until well coated.Stir in sugar,flour,cinnamon and salt;mix well.Turn into 9" unbaked pie shell.Cover edges with aluminum foil.Bake @ 375 degrees for 20 minutes.

TOPPING: Melt over hot(not boiling water,Nestle Butterscotch Flavored Morsels and butter;stir until smooth.Remove from heat;stir in flour and salt.Blend until mixture forms large crumbs.Remove foil from pie.Crumb mixture over top of hot apples.Bake @ 375 degrees 25 minutes longer.

Invent an advanced new pie. A Pumpkin Apple Pie with pecan chocolate cream.....or something? I'm sure it wouldnt be hard to do. Heck I have some pumpkin and some apples I might give it a try.

Make apple. Everyone will love it and it's a great pie to master. Besides apple is more complicated than pumpkin! Your ratios of sweet to tart apples has to be just right for the flavor to be balanced. Your moisture level in the filling has to be right or the apples will be dry. Your crust has to be just right or it may get soggy. I dont' think an apple pie is too simple!!!

Make a chocolate cream pie.

There are variations you can try. You can make it a chocolate mousse, or add peanut butter sandwich cookies as suggested on a food company website.

If that doesn't work, try a fruit crumble. Getting that topping just right can prove to be difficult.

Let them choose

Take the recepies from here and some from various books and internet that you know can be made, or they can help you make. Hold a voting session. Each girl can vote on what recepie they would like to eat or help in making. Keep the selection down to at most five diffrent types of pies, and change them around every week.

This is the pie that I would make:

Pumpkin Pecan Pie
This is an excellent pie. The layers remain separate and distinct, and the flavors compliment each other beautifully.
Unbaked 9-inch pie shell

1 large egg, slightly beaten
1 cup pumpkin purée (fresh cooked or canned)
1/3 cup sugar
1 tablespoon heavy cream, half-and-half or whole milk
1/2 teaspoon cinnamon, rounded
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger

2 large eggs, slightly beaten
2/3 cup light corn syrup (Karo)
1/2 cup sugar
3 tablespoons butter, melted
1/2 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 375°F.
For the pumpkin layer, combine 1 egg, pumpkin, 1/3 cup sugar, cream, cinnamon, nutmeg and ginger. Spread gently over bottom of unbaked pie shell.

For the pecan layer, combine 2 eggs, corn syrup, 1/2 cup sugar, butter and vanilla. Stir in pecans. Gently spoon mixture over pumpkin layer in pie shell.

Bake for 50 minutes.

--------------TOP IT OFF WITH...

Apple brandy whipped cream:
1 cup heavy cream
2 tablespoons superfine sugar
2 tablespoons apple brandy

***DRIZZLE THIN LINES OF CHOCOLATE SYRUP OVER THE TOPPING, FOR A FANCY LOOK.

Make the whipped cream:
In a chilled bowl, beat the cream, sugar and apple brandy until stiff peaks
form. Refrigerate until ready to serve
the dessert.

-----------------------OR, WITHOUT ALCOHOL...

1 cup heavy cream
2 tablespoons superfine sugar
Dash of apple pie spice or a dash of cinnamon (TO TASTE)

******AGAIN, DRIZZLE THIN LINES OF CHOCOLATE SYRUP ON THE TOPPING.

Maybe a tarte tatin? It's basically an apple pie made with puff pastry-should be challenging enough. You can find a recipe at food tv website.

well, you could try to make cheesecake-apple pie. i don't know how hard it is to make cheesecake, but the finished product is a piece of apple pie with a thin slice of cheesecake on top. served Ala-mode with whipped cream it was de-lish! if i knew how to make it i swear i would tell you, but i only tried it at a restaurant...

or, you could just make an apple cheesecake. i mean come on, who doesn't like cheesecake?
