If you are speaking to a woman, it would be "dulcis mea"; or if referring to a man, "dulcis meus". The word order is not mandatory here, you could reverse it if you preferred it the other way. Latin word order is usually quite different from English, as it is dependent upon cases to create sentence structure.

but
1.if your are addressing to a person, you have to use vocative case: it's ALMOST identical: to male person you can use also:
mi dulcis (meus dulcis is also alright)
2. "my sweet", I think, is a peculiar use of english: you can use mea/mihi dulcis, but keep in mind that it can have a meaning sligthly different.
