"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese
Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.
Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro
Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.
Linguine pasta salad
1 lb. linguine, cooked and cooled (or other pasta)
1 bottle creamy italian dressing
1 pkg. kraft cheddar cubes
1/2 pkg. sliced pepperoni
2 tomatoes, diced
1 medium cucumber, peeled and diced
Combine all ingredients in large bowl and toss.
CHICKEN CORDON BLEU BAKE
1 pound small red potatoes, cut into 1-inch chunks
1 tablespoon water
1 (10 3/4-ounce) can condensed less-sodium, less-fat cream of chicken soup
1/2 cup skim milk
1 pound chicken breast tenders or strips
12 ounces fresh broccoli florets
4 ounces cooked ham, cut into 1/2-inch chunks
1 cup reduced-fat shredded Swiss cheese
1/4 cup chopped fresh parsley
1 clove minced garlic
Heat oven to 350 degrees. Combine potatoes and water in a large bowl; microwave on high for 3 or 4 minutes or until potatoes are tender; drain. In a small bowl, mix soup and milk until smooth. Add soup mixture, chicken and remaining ingredients to potatoes; mix well. Transfer mixture to a 9-by-13-inch baking dish coated with cooking spray. Bake, uncovered, 50 to 55 minutes or until chicken is no longer pink.

Breakfast Pizza
1 can Pillsbury biscuits
1 packet country gravy mix
breakfast sausage (half a pack of links, or half a "tube")
1/4 onion chopped finely (optional)
6 eggs
1 bag mozzerella cheese
salt
pepper
garlic powder
open can of biscuits. take each biscuit, and shape it into a bowl, or you can flatten all of the biscuits and pinch them together to make like a pizza crust (I like the bowls). Place them on a cookie sheet,and preheat oven to temperature recommended on biscuit can. Set aside.
Prepare gravy according to instructions on bag. Set aside
Fry sausage and onions (if you want them) together. use scissors to cut (raw) sausage links into small pieces, or if using "tube" sausage, cook it like you would ground beef (crumbled, brown, ya know). Drain grease, and set aside.
Crack eggs in a bowl, and beat with a fork, Just like you would scrambled eggs. Cook in frying pan, but do not cook them all the way through (they'll turn green in the oven). When they are almost finished, but a little runny still, that's a good time to take them off of the heat. Set aside.
All right. Now the rest is just like making a pizza. Spoon gravy onto raw biscuits. leave a little room at the edges. Add the sausage,and eggs. Top with cheese. Sprinkle some salt, pepper and garlic powder on top. Place in oven, and bake until cheese starts to brown, and the biscuits look done. Usually around ten minutes or so.
This is awsome. My high school used to serve breakfast pizzas similar to this, and I made them at home by memory. If you have leftovers, wrap them up and put in the fridge. They taste good the next day, but after that, pitch 'em.
Milk (obviously) goes good with this, but I also have a bad habit of drinking diet coke with my breakfast (shhhhh).

Beef Enchiladas Ole Recipe
Ingredients:
1 pound ground beef or chopped boneless skinless chicken breasts
1 cup chunky salsa -- divided
1 pound processed Cheese Spread with Jalapeno Peppers -- cut up, divided
10 flour tortillas
Directions:
Brown meat, drain. Stir in 1/2 cup of the salsa and 1/2 of the cheese; cook and stir on medium-low heat until cheese is melted.
Spoon 1/4 cup meat mixture in center of each tortilla; roll up. Place tortillas, seam side down, in microwave baking dish. Top with remaining 1/2 cup salsa and cheese. Cover loosely with microwavable plastic wrap.
Microwave on HIGH 4 to 6 minutes or until cheese is melted.

Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Ambrosia Salad
2 cans mandarin oranges
2 small (or 1 large) can pineapple
1 cup small marshmellow
1 cup shredded coconut
Small carton of Coolwhip
Combine all the ingredients in the order given. Maybe use a little less than the full carton of Cool Whip.

Ever thought about making a Quiche? There’s a recipe of his that I found works pretty well and doesn’t take boat loads of equipment to pull off:
2 eggs
1 cup of heavy cream or half and half
Pinch of salt
Standard 9 inch frozen pie crust
Any additions you like – I use ½ cup of frozen spinach, ½ cup of grated cheese and 1 tsp of crushed garlic.
Beat your eggs, salt and cream together until it’s one solid color. Add your other ingredients. Fill pie crust to about ¾ full with the mixture. Bake at 350 for 45 minutes and let cool for another 15 minutes.
Yes, essentially it’s a glorified omelet, but tastes incredible and is quick and easy to prepare!
