Tinned tomatoes, frozen vegies - meat is really expensive and if you must have you meat fill - mince.
Chick peas - make any meal go further
Freeze the leftovers and eat them on days you have no time to cook.

I too am on a tight budget and am watching what I eat (and losing weight!!!). Tonight I fixed turkey spaghetti using ground turkey and Barilla brand Marinara sauce. I added some chopped onions and zucchini to the meat and browned it together, drained it and added the sauce. It was wonderful. We also do a lot of stir fry type meals with cooked rice, vegetables and chicken each stir fried in a little olive oil (do separately) and add teriyaki and soy sauce - you could leave out the chicken if you wanted. We use zucchini, onions, mushrooms and red bell pepper. Those are just a few ways to eat healthy and cheap. Good luck!

Learn to make tofu in all its wonderful possibilities. Tofu is inexpensive and very healthy. www.vegetariantimes.com, foodnetwork.com, prevention.com are all good places to find tons of recipes. Look in your public library, too!
Oatmeal is great. Puree canned garbanzo beans, mix with some oatmeal and form into patties. Fry in a little olive oil. Protein, fiber, low fat, heatlhy.
Learn to make your own seitan. This is high protein meat substitute from Japanese cuisine. You can probably find a mix in your health food store OR get wheat gluten and make your own. You can find recipes on line.
The more things you make yourself, the lower the cost will be.

truly if your broke need healthy food and cheap that will go a long way. Vegetarian! Veggies and legumes are cheep and go a long way. And talk about the health benefits.....where to start
You can always add meat when you have the money, but when you dont you still have a great meal

Whole grains you cook yourself are cheap: brown rice, whole wheat pasta, whole grain breads.
Veggies are almost always cheap and you can stock up on frozen ones on special.
Cheap proteins include eggs, chicken thighs (5 lb frozen bag is only a couple dollars), turkey legs and some seafood.
Good for you eating healthy on a budget! :thumbs up:
