Acrobat 8 is newer and has several functions changed,.
Honestly I like both, but the newer layout in 8 is more industry standardized and probally will keep you on the upward curve of 'innovation'. It also comes with some Acrobat applications that function better in the newer interface.
I use Adobe product every day and I like the fact that 8 is more cross compatible with other Adobe products.
It is also "Backwards" compatible. You can save in an older format and it will read older formats.

acrobat 7 is more professional to assist you as much as you can extract .On top of that it is backed by adobe through step by step.
