Au Gratin Carrots
2 pounds carrots, sliced
1/2 cup chopped onion
1/4 cup butter or margarine, divided
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups milk
4 ounces process American cheese, cubed
2 tablespoons chopped fresh parsley
2 cups cornflakes, crushed
Cook the carrots until crisp-tender; drain and set aside. In a saucepan over medium heat, saute onion in 3 tablespoons butter until tender. Stir in flour, salt and pepper. Gradually add milk; bring to a boil, stirring constantly. Cook for 1 minute or until thickened. Stir in the cheese just until melted. Add carrots and parsley. Pour into a greased 8-in. square baking dish. Melt remaining butter; add cornflakes. Sprinkle over carrots. Bake, uncovered, at 350° for 20-25 minutes or until bubbly. Yield: 8-10 servings.

Broccoli-Cheese Casserole
1 c. mayonnaise
1 can cream of celery soup, undiluted
2 eggs, beaten, at room temperature
2 pkgs (10oz each) frozen chopped broccoli, drained
¼ c. minced onion
1 c. grated sharp cheddar cheese
1 ½ tbsp. Worcestershire sauce
1 ½ tsp. kosher salt
Freshly ground black pepper, to taste
1 cup herb-seasoned stuffing mix
2 tablespoons butter
Grease a 2-quart glass or Pyrex casserole and set aside.
In a large bowl, combine the mayonnaise and soup, mixing well. Stir in the eggs and broccoli. Add the onion, cheese, Worcestershire sauce, salt and pepper. Place in the prepared casserole dish and top with the stuffing mix. Dot with butter. Bake at 325° for 45 minutes.
Serves 8-10.

Hometown Buffet/Old Country Buffet Spinach Marie recipe
1 (10 ounce) package frozen chopped spinach
4 beaten eggs
1/4 teaspoon salt
1/8 teaspoon pepper
2 3/4 cups heavy cream
2 cups mild Cheddar cheese, shredded
1 cup fine dry bread crumbs
Paprika
Butter a 9-inch glass pie plate or a 9-inch square dish well. Thaw and drain spinach.
Beat the eggs well and beat in the salt, pepper and cream. Stir in the spinach and cheese. Pour into dish. Top with 1/4 to 1 cup of the crumbs and sprinkle generously with paprika. Dot the top with 2 tablespoons butter. Bake at 375 degrees F for 35 to 50 minutes (start checking at 35 minutes). Don’t over-bake.

Vegetable Casserole

1 x - 24 oz assorted frozen vegetables
1 can cream of mushroom soup
1/2 lb Velveeta Cheese
1 box Stove Top stuffing
1 stk margarine

Cook vegetables as label requires. Drain off all but 1/2 cup water. Then mix in soup, cheese and stuffing seasoning. Pour into casserole. Cover with dry stuffing. Melt margarine and pour over all.
Bake @ 350 degrees for 35 to 45 minutes.

Baked Spinach

Ingredients

(6 servings)

1/2 c Butter
8 oz Cream Cheese
2 pk Frozen Spinach
1 pk Lipton Onion Soup Mix
Breadcrumbs

Instructions

Melt butter in a large frying pan. Add 2 packages of spinach. Break up and stir. Add cream cheese and onion soup mix. Stir well. Place in a casserole. Top with breadcrumbs and bake at 300oF for 45 minutes.

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Creamy Vegetable Casserole:

1 (10 3/4-ounce) can cream of broccoli soup, undiluted
1 (10 3/4-ounce) can cream of chicken soup, undiluted
1 (8-ounce) container sour cream
1/2 teaspoon pepper
1 (16-ounce) package frozen cauliflower, carrots, and snow pea pods, thawed
2 (10-ounce) packages frozen white and wild rice with French-style green beans, thawed
1 cup (4 ounces) shredded Swiss cheese
1/4 cup sliced almonds

Combine first 7 ingredients; spoon into a lightly greased 13- x 9-inch baking dish.

Bake at 350° for 20 minutes; sprinkle with sliced almonds, and bake 20 more minutes or until top is bubbly.

NOTE: 1 (10-ounce) cans chunk white chicken, drained, may be added. For frozen mixed vegetables, we used Birds Eye Farm Fresh Mixtures; for frozen rice and green beans, we used Green Giant.

Yield: Makes 8 servings

"Creamy Broccoli and Cheese" - 4 servings

1 (1 oz.) packet Hidden Valley Original Ranch Dressing Mix
8 oz. cream cheese
3/4 cup milk
1 lb. broccoli; cooked and drained
1/2 cup shredded Sharp Cheddar cheese

In blender container, combine dressing mix, cream cheese and milk. Pour over broccoli in 9" baking dish; stir well. Top with cheese; bake at 350* - 25 minutes or until cheese is melted.

spinach supreme
2 boxes frozen spinach
2 TBL grated onion
2 grated garlic cloves
2 slices of bread
1 tsp of Worcestershire sauce

cook spinach in boiling water. drain. add the next 4 ingredients. stir. put into a buttered casserole.

topping

saute 2 slices of bread in 3 TBL butter and 1 clove of chopped garlic
turn off heat. add 1/4 Parmesan cheese. stir. sprinkle on top of spinach.

bake at 350 for about 15 minutes.

you can adjust to taste.

steamed broccoli covered with velveeta and crushed ritz crackers.

Can be done several ways, the end is all the same. I usually steam the broccoli in a microwave leaving it a bit "al dente" then I put the broccoli in a oven safe dish, cover with melted velveeta and spinkle liberally with crushed ritz crackers mixed with real butter. bake for approx 10-15 minutes at 350 degrees to brown the top and serve. REALLY GOOD!

You can make all kinds of variations of the green bean casserole. Use a can of veggie mix, peas, carrots, whatever.
