I usually rub some Kosher salt on them, coarse black pepper, some white pepper, rosemary leaves, and some balsamic vinegar.
Always done Rare..especially if its a rib-eye or a new york.

I like Rib eye with quite a bit of fat done medium rare - medium seasoned with salt and pepper with mash potato , Mushrooms , fried onions and a drop of gravy.
Or
Cheese steak sandwich.
Steak done as above with some strong cheddar, good bread drizzled with olive oil, with Lettuce, red onion and tomato

My ex loved his steak done "blue" Which was literally a second on each side of the fillet, so it was still nore or less raw with blood dripping from it!
It was so minging, but actually tasted quite nice!
I prefer mine medium though!

I also used to order my steaks well done, but it was always burnt. I order them medium-well now, and it generally turns out right.

(fillet steak) seasoned with garlic granules,salt and pepper fried slowly in olive oil. medium to well done. Served with home made chips, peas, onion rings, fried mushrooms and a side sald. mmmmmmmmmm making myself hungry!
