The South Beach diet is a lightened version of the Atkin's diet. You can eat small quantities of carbohydrates with either diet. They are both perfectly safe. The first 2 weeks establishes your body into a "fat metabolism" versus "carb metabolism" machine. That's why the first 2 weeks are more strict and limiting. Once your metabolism switches over to fat burning, you can gradually add more carbs each week.
