I have one of the high tech rice cookers from Japan that keeps rice warm, and I usually can keep it in the cooker for two days at the most. Sticky rice, which is what you'd be eating with chop suey, will start to lose its flavor and harden in the fridge in about two days. I wouldn't eat it after that. To keeps it a little fresh, either add some of the juice from the chop suey or add a little water to the container as it dries out.

Don't know about the chop suey, but covered rice can stay about three days before getting too hard to eat. Longer if you have some of the liquid in it.
Most food, if stored properly, tend to last about six days.

i wouldnt keep it for more then a day or two (even though it probably wouldnt last longer), because of my preferance. In fact, i try to avoid left over rice alltogether. Im pretty sure that it can last about 3-5 days until you its unsafe to eat.
