Fried Cauliflower INGREDIENTS: 1 head cauliflower, broken into small florets 1 egg 2 teaspoons milk 1 cup cracker crumbs 4 cups oil for deep frying DIRECTIONS: 1. Place cauliflower into a pan of lightly salted boiling water. Cook for 5 to 8 minutes, or until tender. Remove from heat, drain and cool. 2. Heat oil in a deep-fryer to 365 degrees F (180 degrees C). In a small bowl, whisk together the egg and milk with a fork. Place cracker crumbs in a shallow dish. Dip cauliflower in the egg mixture then roll in cracker crumbs. 3. Fry coated cauliflower in the hot oil until golden brown. Drain on paper towels. ----------------------

Do not put a lid on the pan !!! this happens with green vegetables in that they loose colour and go a horrible greyish colour when cooking. You would be best as others have said to steam the cauliflower but if you decide that boiling is the method for you leave putting the cauli in till the water is boiling and add a little salt to the water.

Cauliflower Soup:
2 tablespoons butter
2 cups finely chopped onion
4 1/2 cups cauliflower florets (about 1 head)
3 cups diced peeled baking potato
1/2 cup finely chopped carrot
1 teaspoon caraway seeds
6 cups fat-free, less-sodium chicken broth
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
Melt butter in a Dutch oven over medium-high heat; add onion. Cook 4 minutes or until lightly browned, stirring occasionally. Add the cauliflower, potato, carrot, and caraway seeds. Cook 6 minutes or until cauliflower begins to brown, stirring frequently. Add broth; bring to a boil. Reduce heat; simmer 20 minutes or until vegetables are tender. Stir in salt and pepper.
Yield: 6 servings (serving size: 1 1/2 cups)

I don't understand why you have this problem. Could it be that you are cooking it for too long? Try stir-frying the florets for a short time (a few minutes), add some water and salt, cover the wok with a lid and let them cook in the water for a few minutes. The result should be white and delicious. Never add soya sauce to your vegetables if you don't want to darken them.

Will I see everyone has already told u to steam it.Only for 5 minutes after the water starts boiling.If u lose track of time just push a fork in it to see if it's tender.Then try some cheese on it.Yummy...Good luck All veggies should be steamed because it doesn't boil the vitiamins out of it .

cut a lemon in half and cook with the cauliflower..or you could put milk in with the cooking water.

i boil mine for 15 minutes and they never go dark, how fresh is you're cauliflower? are you putting ahything else in the water? If your pan giving off some residue?
