I have only a stove top to work with, and limited cooking ability being another handicap, tell me i wont have to eat another stirfry ..........tonight at least.

I love my "Mexican mess" as I call it. Take 1 lb hamburger or sausage & brown over medium heat in large skillet. Drain, then stir in 1 pkg taco seasoning & a little taco sauce. Cook over medium heat about 15 minutes, then stir in 1 can refried beans. Cook about 10 more minutes, then remove from heat. On a plate, layer tortillia chips, then spoon hot meat mixture over top. Serve with shredded lettuce, chopped onion, chopped tomatoes, shredded cheese, sour cream or whatever favorites you may have. Enjoy with a nice margarita!!

Stir fry....you can use a variety of vegis and meats to make several different meals. Can be served with white or brown rice and a salad. You could also make baked potatos in the microwave to go with stir fry. Also you could make fajitas, chicken or steak, marinate all day, cook with green bell peppers and onion, make some guacamole and salsa, serve with some flour tortillas. have refried beans topped with cheese on the side. Southwest Chicken, skinless boneless chicken breasts, cook in a dry skillet until done, top with mild paces picante sauce and cheddar cheese, cover with a lid, turn off the heat. Let sit until cheese is melted, serve with spanish rice, which is also made on the stove top, and a salad. Spaghetti and meat sauce. Quick and simple. Warm up garlic bread in the microwave, serve with a bagged salad. Have a fun trip!

SWISS STEAK - STOVE TOP


Serving Size : 4

1 pound boneless beef round steak, cut 3/4 -- inch thick
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cooking oil
1 can (14 1.2-oz.) tomatoes, cut up
1 small onion, sliced and separated into rings
1/2 cup celery, 1 stalk
1/2 cup sliced carrots -- (1 med.)
1/2 teaspoon dried thyme, crushed
2 cups hot cooked noodles or rice

(STOVE TOP VERSION):
Trim fat from meat. Cut into 4 serving-size pieces. Combine flour, salt
and pepper. Using the notched side of a meat mallet, evenly pound the
flour mixture into the meat. In a large skillet brown the meat on both
sides in hot oil. Drain off fat. Add undrained tomatoes, onion, celery,
carrot and thyme. Bring to boiling. Reduce heat. Cover and simmer
about 1 1/4 hours or until meat is tender. Skim off fat. Serve with
noodles or rice. Makes 4 servings.

Chicken Parmesaen

Chicken breasts split in half (so they aren't as thick-they cook better)
Dip chicken in beaten eggs
Coat in a italian bread crumb, parmesan cheese, basil mixture
Place in a skillet heated with oil
Cook until done

Top with marinara sauce, mozzerella cheese. Can be served with pasta or veggies.

make mac and cheese
elbow pasta boil water
drain and add velvetta to the pot with past and alittle milk heat over stove as u melt cheese and make it creamier with the milk then ur ready to serve

pan fry some chicken with pasta and canned peas
or heat up some soup and make biscuits
or fry some hotwings with onion rings and french fries

Fried Chicken


2-3 lbs. chicken

2 cups flour

2 tsp salt

1 tsp curry

1 tsp pepper

1 egg

1 cup milk

1 tsp poultry seasoning

vegetable oil

brown paper bag

heavy cast iron frying pan


Thoroughly rinse and clean chicken (remove as much fat as possible).
I let mine soak in vinegar and water for about 1/2 hour.
Mix flour and seasonings together in brown paper bag.
Mix egg and milk together in a bowl.
Dip chicken, one piece at a time into egg mixture then into flour bag.
Coat evenly and allow to sit for about 15 minutes.
Use enough vegetable oil so that chicken will be covered.
Place chicken into pan when oil is hot.
Fry till golden brown, covering the last 10 minutes.


Mama's Red Bean & Rice



1-lb. red kidney beans

1-lb. cubed ham seasoning

1/2-lb. pickled pig tails

1-chopped yellow onion

5-toes garlic

1/2-chopped bell pepper

1-tsp. crushed red pepper flakes

1-tsp. salt

2-tsp. lard or bacon fat

Soak bean in pot over night
Drain. Put on stove in large pot of water on medium heat add salt.
Put pig tails in pot of water and allow to cook until almost tender.
Cook beans until they begin to boil add onion, garlic, bell pepper and crushed red peppers. When beans become slightly tender add ham seasoning, cook for 20 more minutes.
Add pig tails and cook for 15 more minutes.
Add lard or bacon fat. Cook until beans are tender (optional-add fresh chopped parsley).
Serve over your favorite rice or with corn bread.

Steak Tacos

Ingredients:

Steak

Medium Cheddar Cheese

Guacamole

Sour Cream

Onions (optional)

Lettuce

Tomatoes



Brown steak in pan, drain oil, add my
special sauce and 1 1/2 cups of water.
Let simmer until meat is good and tender.
My special sauce will make the steak melt in your mouth. Fry corn tortillas in pan and add all the remaining ingredients above.

"Garlic-Mushroom Rib Eyes" - 4 servings

4 boneless rib eye steaks, 1" thick
1/4 tsp. pepper
1/8 tsp. salt
4 tbsp. butter; divided
4-8 garlic cloves; peeled and sliced
1 lb. sliced fresh mushrooms
3 tbsp. beef broth

Sprinkle steaks with pepper and salt. In a large skillet, melt 1 tbsp. butter. Cook the steaks for 2 minutes on each side or until meat reaches desired doneness. Remove and keep warm.
In same skillet, cook the garlic in 1 tbsp. butter for 2 minutes. Remove garlic and set aside. Add mushrooms and remaining butter to skillet; saute for 5 minutes. Stir in the broth; bring to a boil. Cook and stir over high heat until liquid is absorbed. Add reserved garlic. Serve over steaks.


"Campbell's Souper Simple Mac 'n' Cheese" - Serves 4

1 can Campbell's Cheddar Cheese Soup
1/2 soup can milk
1/2 soup can water
1 cup uncooked elbow pasta

Mix soup, milk and water in saucepan; heat to a boil. Stir in pasta; cook over low heat 10 minutes or until done, stirring often.


"Swanson Simple Seasoned Pasta" - Serves about 6

2 (14 1/2 oz.) cans Swanson Seasoned Chicken Broth with Italian Herbs
3 cups uncooked corkscrew pasta

In saucepan, heat broth to a boil; stir in uncooked pasta. Simmer gently over medium heat 10 minutes or until pasta is done, stirring occasionally.


"Swanson Pork with Roasted Peppers and Potatoes" - Serves 4

4 boneless pork chops, 1/2" thick
1 tbsp. oil
4 medium red potatoes; cut up
1 medium onion; sliced
1 tsp. dried oregano leaves; crushed
1 cup Swanson Chicken Broth
1/2 cup diced roasted red peppers

Season chops with black pepper. Heat oil in nonstick skillet over medium-high heat. Add chops and cook 10 minutes or until well browned. Remove chops.
Add potatoes, onion and oregano. Cook 5 minutes or until browned, stirring occasionally.
Add chops, broth and peppers. Heat to a boil; cover and cook over low heat 5 minutes or until done.
