if youre cooking a breast or thigh as one piece you can wrap it in foil with a bit of seasoning (ie bit of garlic, ginger, s&p) then fry it in a pan with just a little water in the pan, ....keeps it really juicy and stops you from having to have oil....great things with chicken are steam asparigus, brocolini, and carrots and some boiled rice. (you can put some cheesy sauce or white sauce on the vegies if youre not dieting)

You don't need to deep fry chicken..You can pan fry or even bake...

You can use two tablespoons of vegetable oil for 8 drumsticks and brown the chicken on Med until even on all sides then lower the heat so the bones can cook all the way through.. I like bettycrocker.com for easy recipes.

Side dishes....Well potatoes/rice or pasta are good choices. You can spice any of the three choices up with herbs or add cheese for more flavor.

You do not have to use a lot of grease to cook chicken in a frying pan. About 2 tablespoons.

Good dish to go with chicken is salad or cauliflower cheese or a five bean salad or rice or pasta or enchilados

You don't have to use a lot of grease unless you are deep-frying the chicken with a batter coating.

If you instead just pan-fry the chicken or saute it, you only have to use a little bit of oil -- a couple of tablespoons, or even less if you have a non-stick pan.

(You don't put batter on chicken that you're pan-frying or sauteing. You just put salt, pepper and whatever spices you are using. Well, you can dust it with a little flour if you want, to give it a kind of toasty little coating, but you don't put batter on it.)

Salad is good with chicken.

So are potatoes or rice, or carrots or any vegetable.

If you want to simply brown the chicken breasts in a large frying pan over high heat add approx 2 tablespoons of olive oil.

You can use as little as 1-2 table spoon of oil for the whole pan.

But if you are deep frying, you will probably need many ounces of oil as the chicken needs to be submerged in oil.

if it's a nonstick pan use a little olive oil, if it's stainless steel you have to use more and also keep the heat lower or it will stick. A good side with chicken is steamed broccoli tossed in butter, garlic, and lemon juice.
