You need more carbohydrates, like Pasta or Potatoes.
Also include vegetables and meat and rice.

I had the same problem! I thought that by eating junk food, carbs, pasta etc., I could gain the weight I needed. Instead, I continued to lose. I went to a Dr. and the key is PROTEIN! Raise the protein intake. This can be any kind of meat, beans and seafood are probably best. I would stay away from the cheese and eggs because of your high cholesterol. Since my husband is Hispanic, I ate alot of tacos (crispy), enchiladas and rice and beans. This was better because the tacos and enchiladas are made with the corn tortillas so you are not getting as many carbs.
Spanish Rice
Start with some olive oil and sautee the rice first. You are looking for a VERY light beige color. Saute it with some chopped onion and jalapeno. Then, when you add your water, use tomato sauce for part of the water. Add some garlic powder and cumin and it will be great!
Beans
Rinse however many beans you want to cook. Put in pan and cover with about 3 times as much water. Add fresh chopped onion, jalapeno, tomato, and some salt back. (The salt back is not really necessary but will add more protein) Add salt, pepper and either minced or fresh garlic. Bring to a boil and let boil until the beans are the consistency you want. You need to make sure to watch them because the water will cook down. Just keep adding water to them. They will burn and then they are ruined. Really bad!
Green Chicken Enchiladas
Bonless skinless chicken - either white or dark whichever you prefer
1 jar Heinz Chicken Gravy
1 can Green Enchilada Sauce
8oz Sour Cream
Corn Tortillas
Boil chicken until done using whatever you want to season (I use chopped onion, fresh
jalapeno, garlic, salt and pepper)
While that is cooking mix together your gravy, sauce and sour cream.
When chicken is done, let cool a little and put in a chopper to chop it up.
You need to soften the tortillas in hot oil. Do not let them get hard. You are just putting
them in there long enough to make them bubble.
Spread some of sauce on tortillas - not too much - then add chicken.
Roll them and place them in a baking dish with seam side down.
After your pan is full, spoon some of remaining sauce mixture on top of each enchilada -
but don't make them soggy.
Sprinkle with cheese and bake at 350 for about 35 minutes

Some time ago I had to put on weight after a long illness. The docs had be drink a milkshake everynight b4 going to bed then in the morning I was to eat a small steak with eggs. I know it sounds goofy but it worked. Fatty foods will not necessarily help you add weight it would cause problems with your arteries more than anything else.

Stay away from fried food, it will make your cholesterol higher! You need to go towards carbs, and even so, you need to be careful. try eating 5-6 time a day, to try to keep up with your metabolism, although, in order to lose some weight I was told to eat several times a day small amounts of food. That part I'm not really sure. Pasta, potatoes, and lean cuts such as pork, chicken, and fish with lots of carbs, that¡s a sure way to gain weight, try malt, it is nutritious and fattening. try pumpkin soup made with chicken stock. Bananas and mangoes are very filling and will put some meat in your bones. I get lots of recipes from ivillage, bettycrocker and allrecipes, these sites will get you thousands of recipes, you can also write to me and I will get you as many recipes as I can. Be creative!!!!

u shouldn't eat more fat, u shud eat more protein and exercise (if u don't already) good things to eat are:
-peanuts/peanut butter
-meat/fish/poultry
-protein shakes
