I love them but I tend to overcook. I guess that is my answer, but if you don't cook it long enough its raw. Ick!

My family has this tradition of grilling salmon for christmas. We grill it on a cedar plank with delicious spices. I am NOT a fish person but this salmon is sooooo good.

Cumin-Dusted Salmon Fillets:

1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 (6-ounce) salmon fillets (about 1 inch thick), skinned
Cooking spray

Combine first 4 ingredients in a small bowl. Sprinkle both sides of fish with spice mixture.

Heat a large nonstick skillet coated with cooking spray over medium heat, and add fish. Cook 6 minutes on each side or until fish flakes easily when tested with a fork.

Yield: 4 servings

You're right. Not done or cooked too long and they're dry. If you like salmon, try these and the timing on the directions seem just right. Enjoy!

Parmesan Salmon-
1/4 c Grated Parmesan Cheese
1/4 c Mayonnaise
1/8 tsp. ground red pepper (cayenne)
1 salmon fillet (1-1/2 lb.)
2 Tbsp. lemon juice

PREHEAT oven to 400°F. Mix cheese, mayo and pepper until well blended; set aside. PLACE salmon, skin-side down, on foil-covered baking sheet. Drizzle evenly with lemon juice. Top with the cheese mixture; spread to evenly cover salmon.
BAKE 18 to 20 min. or until salmon flakes easily with fork. Cut into six pieces to serve.

Basil Caesar Salmon-

4 salmon fillets
1/4 c caesar dressing
pepper
1 c caesar salad croutons, crushed
1/2 c grated parmesan
2 tsp dried basil
2 TBS Olive Oil

Place salmon in greased pan. Spoon the salad dressing over fillets; sprinkle with pepper. Combine croutons, parmesan and basil. Sprinkle over fillets and gently press into dressing. Drizzle with Oil. Bake uncovered at 350 for 15-20 min. (when I didn't have croutons, I used bread crumbs instead and it worked great, I now use that instead)

try fish muffins
use a crab/shrimp stuffing
wrap the fillet around the stuffing
in muffin pans - pampered chef stones work great
cover with foil while cooking so they do not dry out
and cook in oven. Works good with most fish but especially higher quality filets

i like to cook them on my George Foreman grill cuz it makes it very easy. You just slap 'em on the girl, close the top and wait about 8-10 minutes or so, depending on how thick the fillet is. Comes out perfect everytime! That's the cheating way to do it I guess.

Raw is ick? Hm.. you're not Japanese, then..

A little bit of butter and spices and salt, saute on both sides, lower the heat, then cover the lid. It'll be fully cooked in just a few minutes.

Try a little lemon and a little pepper and through it on the grill. Cook about 3-3.5min on each side on a med.-high heat.

BALSAMIC HONEY MUSTARD SALMON


¼ CUP HONEY

2T GRAINY MUSTARD

2T BALSAMIC VINEGAR

MIX, COVER, LET SIT FOR AT LEAST FOUR HOURS AT ROOM TEMP.

1LB. SALMON

SPRAY PAN, SPRINKLE SALMON WITH SALT AND PEPPER, PLACE 2T OF GLAZE ON EACH SALMON FILLET.
BAKE FOR ABOUT 15 MIN. AND ADD MORE GLAZE AFTER ABOUT SEVEN-MIN.

I actually like to poach my salmon in boiling water. When the salmon turns entirely opaque (or beige) in color, that's how you know it's done. I also add to the water citrus juices (like orange, lemon, or lime) to give it some flavor.

On the grill!!!! try some mustar sauce togo with it, and rosemary potatoes as a side dish!!!! Yummy!!!!! I love salmon...
